Apple Pie by Grandma Ople
This pie is AMAZING!! I've made it a couple of times now and had some problems with the apples not softening up, but after a little tweaking it's absolutely delicious! Like other reviewers I only baked the pie at 350 degrees for exactly one hour. After that I lowered the temp to 250, placed the pie on the bottom rack and baked an additional 20 minutes....crust was perfect and so were the apples! I used half golden delicious half jonagolds. To the sugar mixture I added 1 teaspoon of cinnamon, a pinch of nutmeg and 1 tablespoon of vanilla and deducted a tablespoon of water. After mixing the sugar mixture with the apples I dotted it with butter. I made a lattice top crust and brushed it with an egg wash. What I think made it really special was adding a sugar crumble to the top which consisted of a little flour, sugar and butter. Yum....try this pie, you won't be disappointed!

Mexican Beans
These beans are bland without dressing them up with some seasoning. Instead of 1 medium tomato, I add a can of diced tomatoes with green chilies and then I also throw in 2 teas. cumin, 1 teas. cayenne (or more depending on how spicy I want them), 1 teas. chili powder and salt to taste. They don't remind me of Mexican style beans, they're more like southwest style beans (like the ones you get at Chili's, only much much better) Give them a try, they're fabulous!!
