Strawberry Jam

The only heavy-bottomed pan I had was a huge stock pot, so I opted for a smaller pot that had a thin bottom. The pot heated up quicker than expected, and I ended up with a super thick jam... so thick that once it set, it won't spread; I have to dig it out of the jar with a spoon. That being said, the taste of the jam is delicious; I will be making this again, but I'm cutting down the time by half. I did make a change to the recipe - I used 1/4 of the sugar, but everything else was the same, including the way I sterilized the jar, canned it, etc.

Slow Cooker Beef Stew I

This recipe is excellent. I followed the directions, with only a few exceptions - we like a lot more vegetables in our stews, so I doubled all the vegetables and added a little more broth to compensate. I can't give enough praise - my boyfriend has made this a regular meal. We all love it!

Lasagna Alfredo Roll Ups

I tried this recipe earlier tonight for myself and my roommate - and we love it! I will definitely make this again! I used regular onions, mushrooms, minced garlic, and whole fat ricotta cheese, and I didn't measure Parmesan cheese, though I'm certain I used more than 1/4 of a cup. The filling was just enough for 8 rolls, and in no way dry. I didn't make my own Alfredo sauce; I bought two sixteen ounce jars of Ragu for that, mainly because I have a personal preference for extra sauce on just about anything that sauce goes with. I also lowered the heat to 350º and baked for 40 minutes; my dinner came out perfect at that temperature. Other than the onions and mushrooms, I wouldn't change a thing for this recipe!

Cucumber-Tomato Sauce

When I found too much cucumber in my refrigerator, and was tired of the same old cucumber recipe, I searched the site and found this recipe. I must admit; I wasn't completely sold when I read it, but I thought I'd give it a try - and I was not let down! I absolutely love this recipe - and my family loved it too! The only thing I really did different was substitute the dried seasonings for a general Italian seasoning mix. Other than cutting the vegetables up into pieces that were slightly too big (I'll go smaller next time), I wouldn't change a thing!
