Cream Cheesy Cubed Zucchini with Lemon and Oregano

This makes a great way to enjoy zucchini that is out of the normal routine. I made it according to recipe and we all enjoyed it. Would be great as a main dish with the addition of chicken, shrimp or pork. Could see adding cherry or grape tomatoes in moderation also. As it is it makes a great, light side dish that has all the flavor of a rich and creamy offering.

Mexican Style Meatballs

Very tasty. I think a touch of sugar helped them out. Just the right amt. of heat for most people. Served at a party and went over well. Will keep them in my appetizer file and make again.

Awesome Sausage, Apple and Cranberry Stuffing

I rated this only 3 stars, probably because I tried to cook it in the oven outside of the bird. I added ground turkey instead of sausage. That was OK, but I just didn't have it moist enough. The hands-down winner was the slow cooker stuffing by a 10-1 margin. Will try this one again but maybe put it inside the bird or in the slow cooker.

Savory Turkey Gravy

This was OK but I needed to increase the thickener. Although it had good turkey flavor, It still wasn't my mom's gravy. Her's would rate 10 stars.

Cranberry Relish with Grand Marnier® and Pecans

To me, this is the perfect cranberry relish. Quite a bit more costly than that canned glop, as it should be. To my surprise , although everyone liked it, there were some people at my 18 people dinner who missed the old "traditional" canned stuff.

Mom's Sweet Potato Bake

This has become a family favorite! I do adjust it a bit and it has worked to everyone's delight. I eliminate the white sugar and add a bit of maple syrup. The topping is crunched up with added flavor by including coconut flakes and rolled oats to the pecans. It has been a huge hit.

Slow Cooker Stuffing

Turned out great using exact recipe, with the exception of leaving on high longer. It shortened up the process. I would have added a little more sage but everyone loved it. Never would have thought of using slow cooker for this. Came out moist and delicious . This recipe is a keeper.

Rich and Creamy Tomato Basil Soup

Yummy Sweet Potato Casserole

Got rave reviews from guests at Christmas dinner. Omitted white sugar completely. Everyone agreed that they would not have wanted it sweeter. Used XL eggs....a little too much. Would be fine with large eggs. Added old fashioned oats to the topping and had walnuts instead of pecans. Will make again.

Brussels Sprouts with Chestnuts

Sprouts got too soft for our liking. Would cut water time in half. We love sprouts but do not think the chestnuts added anything to the dish. We do like chestnuts, just not in this dish.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Excellent way to prepare any ribs! Loved the outcome. The sauce is great. I ended up bottling some for later use. My son and I are avid cooks and both agreed this recipe is the way to go.
