Oven Roasted Teriyaki Chicken

This was delicious and so easy to make! I used the recipe for the sauce and it turned out great. Thickened up pretty quick. I did change the baking time, because an hour at that temp seemed to be too much. I baked the thighs for 30 minutes, turning half way through. Could have probably baked them 20-25 minutes though.

Ranch-Style Fajitas

These are the BEST fajitas I've ever had! I forgot to marinate them in the morning before work, so the steak only marinated for 2 hours. But it was still juicy and delicious! Even my picky toddler ate it. I also didn't have lime juice so I substituted lemon juice instead. Worked pretty well. I also added a small squeeze of honey (maybe 1/2 TBSP) to the marinade just to give it a little sweetness. I'm excited to try this agin when it marinates for the full 6 hours!

Cinnamon Belgian Waffles

These are fantastic! My 3 year old ate 1.5 waffles! Ususally we're lucky if he eats half. I took the advice of others and used 1 tsp of cinnamon. I also bumped up the sugar to 2 tablespoons. Perfect! And topped with cinnamon infused maple syrup-even better. Next time, I may cut out the baking soda because they didn't turn out as fluffy as I expected...gotta love cooking in high altitude:)
