Apple Butter Bread

Very easy to make and yummy. Perfect for Fall. Accidentally made a loaf with 1/4 cup of apple butter because I misread the ingredients. Still turned out okay but pretty flat, more like brownies. The second loaf I made correctly and it was much better, more like bread.

Authentic Enchiladas Verdes

Husband loved this recipe! We actually made it together and it was a lot of fun. I don't usually like spicy Mexican food but this made me think twice about trying something new. Delicious! So spicy!

Baked Mexicali Pork Chops

Surprisingly good. Husband doesn't like pork chops and I do so this was a good way to prepare them to get him to eat them. He actually enjoyed it and there wasn't much clean up. Nice go to for weeknights! However, would recommend doing 4-6 pork chops with rest of ingredients. Yum!

Slow Cooker Chicken Taco Soup

I used stewed Mexican style tomatoes (halves, not diced) because that's what I had on hand. Also Only had the regular sized 14.5 oz can of tomato sauce so I used the entire can. The beer we keep on hand is Coors Light so that's generally what I put in crockpot recipes. Turned out great. I don't like tomatoes so was good to be able to pick around them! I also cooked on high for half the time and was still great. Husband loved it and he usually turns his nose up at soup. Not that spcy but probably due to the lack of chiles in the tomatoes. Also, read some poor reviews saying they could only taste the beer. Not to be contrary, but there is no way you would taste the beer seperately from the other ingredients unless you did something wrong. Awesome fall meal!!

Chili I

I really don't eat chili but my husband RAVED about this recipe when I made it and I love the way my house smells when its cooking. We don't throw any out, he eats it for days!

Barbie's Tuna Salad

I made this almost exactly, but I don't know where you get a 7 oz can of tuna. I ended up using two 5 oz cans (maybe its a regional thing?). I only used 4 TB of light mayo and 2 TB of relish. I pretty much followed the rest though. My weight-lifting husband at the entire bowl in 1 sitting & raved about it. Loved the protein factor and the flavor. Very good recipe!

Lemon Cream Pasta with Chicken

Fantastic. I followed the recipe pretty much exactly and my husband LOVED it. He kept saying "something smells GOOD!" When he tried it, he couldn't stop eating it! Great recipe, kudos!!

Best Marinara Sauce Yet

This is the recipe I always use now. Sometimes I add mushrooms or ground beef but usually I follow the recipe exactly. My husband LOVES this sauce.

Pumpkin Muffins II

I like this recipe. I didn't have allspice so I used about 1/2 a teaspoon of ginger instead. Next time, I'll cut the ground cloves to about 1 teaspoon as it is a bit overwhelming once they bake. Also, the recipe yields closer to 18 muffins. I do like the recipe a lot though. My husband is enjoying them for breakfast this week - they're very filling!
