Meat and Veggie Stromboli

This was really very good and super easy. I followed the recipe exactly and the only thing I would do different would be to add just a bit more pepperoni. I had everything sliced very thin and the only flavor that kind of got lost was the pepperoni. Other than that I wouldn't change a thing! This will become a regularly used recipe...and it's easy to change up depending on what you happen to have on hand.

Champagne Shrimp and Pasta

I thought this recipe was okay. The family ate it and liked it enough but I'm not sure I would make it again. The sauce definitely needed to be doubled which is fine but it was very thin. I did thicken it up with cornstarch which is fine but even still I think the sauce lacked something. I read another review which felt maybe some prosciutto or salty meat would do it and I think I agree.

Sweet Kielbasa

This was good but not great. I liked the taste of the sauce, I added a bit of cornstarch to the sauce before cooking but it still wasn't as thick as I would have liked it to be. I thought the kielbasa was a little dry too. Could have been the brand but I think next time I'd cover it while cooking to keep some of the moisture in.

Lemon Apricot Cake

Absolutely delicious! Everyone that tried it wanted to know who made it so they could ask for the recipe. Definitely a recipe I will be making over and over. Not only is it delicious but it is an attractive looking cake.

Sweet and Sour Meatloaf

I was surprised this was as good as it was. I made extra sauce to use on the side...the kids liked it that way. I've already made it a few times...definitely a nice change from the ordinary.

I thought this recipe definitely tasted good. I found it very difficult to mix as well as cut when mixtured had cooled in pan. If I were to make again I would probably cut while it was still warm.

Kielbasa Pasta Casserole

This was awesome. I have only had this recipe for about a month and I've already made it for three separate occassions. The only change I made was to use the small size ziti (mini penne). This recipe reheats up very well too..It doesn't get dry at all like some other pasta/sauce dishes do when you try to reheat the next day.

Chicken Enchiladas II

I found these to be easy to make and very delicious. It's definitely a recipe you could alter...add whatever you have on hand. I added fresh mushrooms last time I made them and that was a great touch....definitely a keeper.

Creamed Carrot Strips

This dish is excellent. The sauce is just perfect and makes this dish work great as a side with a great plain meal like filets and potato (baked and mashed). The only thing I changed was I did not use canned mushrooms. Instead, I used fresh shittake and/or crimini...whatever was available at the time. I think it made a big difference.

Zucchini Cobbler

This was a great recipe. I tried this because I was so curious to see if the zucchini would actually taste like apple....and it truly did. Everyone was fooled and asked for a copy of the recipe. I did find the topping (4c. flour) made a bit too much for my liking. I ended up only putting about half the topping on. Next time I may cut that portion of the recipe in half.

Banana Pancakes I

I cooked these like I would cook any other pancake and I thought they were very mushy. Maybe I should have cooked them longer or mashed the banana's better..I don't know but I didn't like the texture at all!

Rhubarb Cherry Crisp

I'm not a big "canned" cherry pie filling fan but I gave this a whirl. I figured where the rhubarb was so bitter the contrast might be warranted. This was excellent! Not as sweet as I was afraid it might be. This is a nice flavor change from the everyday average crisp.

Irish Chicken and Dumplings

This recipe was easy and delicious. I did kind of screw it up because I didn't use a big enough pot so when I went to cook the dumplings they stuck to the pot cover! I was able to "fix" the dish so it was not a total loss. I will definitely try it again as the flavor was excellent. Definitely a hearty meal.

Venison Italian Soup

My husband is a hunter and requested that I make some type of venison soup for our x-mas dinner. I found this recipe and made it and it was absolutely delicious. I was cooking for 12 and because it was a first course and not a main meal I added small soup pasta instead of ziti. I also substituted chicken broth for the water and actually added a can extra so it wouldn't be so thick. Everyone absolutely loved it! Best soup I think I have ever made. It's a keeper for sure!!
