Absolutely Best Brownies

Nice brownies, moist and chewy, but not spectacular. I put snickers in my brownie instead of walnuts. Also very easy to make.

Passover Chocolate Chip Cocoa Meringues

Decided to try this recipe as I've got three egg whites in the freezer that needed to be used soon. Was disappointed with the outcome as the batter tasted really nice, but, like another reviewer, my egg whites did not whip to a stiff peak. Probably put in the flour in one batch too soon.

Apple Honey Bundt Cake

Lovely moist cake that is so easy to make. The hardest part of the recipe is peeling and cutting the apple (I don't have a grater; renting a temporary furnished apartment). This recipe is definitely a keeper! Thank you for sharing it.

Golden Sweet Cornbread

Hot Water Pie Crust I

Really happy with this recipe. The pastry was really flaky and buttery, probably due to me using butter instead of shortening. It was also easy to make, much easier than the traditional cold water method, which couldn't be over handled and the butter and equipment super cold. Too complicated. The hot water method is just so easy.

Pecan Pie V

It was a nice Pecan Pie, but I've made better, particularly Pecan Pie VII. It also took a long long time for the filling to cook. It was just as well I had froze the pastry in the pie tin before pouring the filling in. The pastry would've got burnt otherwise. One good thing is that it is easy to make.

Mediterranean Black Olive Bread

Really good bread and very soft. In fact, this is the softest bread I've ever made and I think it must be due to the three risings. Other breads I've made only require two rise. Anyway, like other reviewers have commented, lower the temp to 450 to 475 and for a shorter duration than 15 minutes. Otherwise, you will end up with a darker crust than it should be. This bread recipe is a definite keeper and I highly recommend it.

Ciabatta Bread

I love making bread, but didn't enjoy making this ciabatta. The dough was very runny and I did resist the temptation to add more flour after the first proof. In the second proof, the dough started to spread, like the Blob, and did not rise. Halfway through the second proof, I ended up putting it into a loaf tin. Tasted okay, but not the ciabatta that I am like. I think I will just go to my favourite bakery for ciabatta next time.

Chilean Empanada

This was very nice and easy to make, although I had assistance from a stand mixer to make the dough. Otherwise, I think the dough would be a lot of work. Next time, though, I'll probably put some chilli flakes in it. There is a little bit of heat, but I like it spicier.

Jamaican Beef Patties

I've never tried jamaican patties before so I can't comment on whether it's authentic or not, but I work with pastry quite a bit, and this has to be the worst pastry to work with. Third cup of water is not enough to bring the dough together. I ended up handling the pastry more than I normally would. The result was a dry pastry.

Herb-Simmered Beef Stew

It tasted very bland. I think it needs tomato sauce or ketchup to liven the dish up. And, there was way too much potatoes. Didn't like it at all!

Bahamian Style Peas and Rice

It tasted more like paella than peas and rice, but then I've only ever eaten the Jamaican peas and rice. Aside from that, my rice took more than 2 hours to cook!! And it did get burnt at the bottom, hence the paella taste. Not my favourite.

Trinidad Stewed Chicken

Very tasty, rich and nice, but thought it was too sweet. Would cut the brown sugar to half of a quarter cup next time. And, would definitely recommend the chilli flakes; it's listed as optional on the ingredients, but it is really a must because I think the spice would be good to cut the sweetness. I didn't use any coconut milk and used skinless thigh fillets. The chicken turned out very tender. Beautiful.
