Boiled Bagels

Nice bagels, but not the dense types that I like. These bagels were chewier. Another problem was that there was too much salt in it. Having said all that, this was a really good bagel recipe for newbies to bagel making, like myself. It was so easy to make and tasted so nice (even if not dense) that I made two batches in one day. But, as other reviewers have commented, they are a smallish-sized 12 bagels. Bagels I've bought from stores were double the size of my bagels.

Pecan Pie VII

This is a delicious pie. I couldn't stop at one slice. The filling is rich and sweet and tasted a bit like butterscotch. I actually used demerara sugar because I ran out of brown sugar and I wondered if that altered the taste of filling. Like other reviewers found, it was a lot of filling and I ended up making a little pie as well. I found the filling wasn't really set. Never ate or made pecan pie, so not sure if that's normal. Set or not, it is a delicious pie and I will definitely make it again. Thank you for sharing the recipe.

Pie Cake

Loved the cake. Halved the recipe, as I didn't need that much cake, but didn't halve the pie filling, so it was more pie filling than cake. Still delicious and moist though. Used apple pie filling, which really worked with the cinnamon.

Buttermilk Pie III

Great tasting pie. But, I put too much flour in (9 tbs) because of what other reviewers had said, and it was a bit fluffy towards the top. Being Australian, and not having tried any when we traveled through the South, I don't know what Buttermilk Pie is supposed to taste like or what its texture is supposed to look like. So, I can't say whether this is supposed to be a true buttermilk pie. Regardless, I loved it and will try again, but this time using 3 tbs and using a deeper dish (as I had way too much custard).

Red Velvet Cupcakes

Wonderful cupcake. So light and moist, probably because I used buttermilk instead of sour cream. Needed to use up left over frozen buttermilk. Hubby said it was the best thing I've made. I even mixed some white choc bits in, but I think it tasted much better without it.

Donut Muffins

This is a keeper. Definitely easy to make and tastes great, just like donuts. However, I didn't dip the entire muffin into the melted butter, instead, I brushed the top with melted butter and dipped in the sugar cinnamon mix.

Chewy Brownie Cookies

Definitely a keeper. Lovely moist chewy cookies that were easy to make and taste sweet, chocalatey and delicious. I made more than the 18 cookies stated on the recipe and was worried they will become dry as other reviewers have found, but my left over cookies kept well though they are only two days old. Thank you so much for the great recipe! P.S. Used butter instead of shortening, dried cranberries instead of nuts (which tasted great) and a mixture of dark and white chocolate.

Ice Cream Muffins

I didn't like these at all. It came out tasting more like a combination of scone and bread than a muffin. The batter was also very thick. The recipe said to soften the ice cream, which I did, but wondered whether it should have been completely melted. And, mine didn't look anything like the picture. I was very disappointed.
