Ninety Minute Cinnamon Rolls

It was tasty, but not spectacular. Hence the four stars. It tastes best the day they're made or else warmed up in the oven/microwave if eating in the next day or two because, like most home made breads, it loses the fluffiness.

Jamaican Barbecue Sauce

Faux Jerk Chicken

I love jerk chicken and have tried quite a few in my travels around the US. This jerk marinade didn't remind me of any of those jerk chicken I've eaten, but that was initially. After a day, the flavours intensified and the lime really came through. It was really nice. Still doesn't remind of the wonderful jerk chicken and ribs we had in Caribbean restaurants.

Chilean Empanada

This was very nice and easy to make, although I had assistance from a stand mixer to make the dough. Otherwise, I think the dough would be a lot of work. Next time, though, I'll probably put some chilli flakes in it. There is a little bit of heat, but I like it spicier.

I would agree with the other reviewers that this is way too sweet. I used about 1/8 cup brown sugar and that was already just too sweet.

Jamaican Beef Patties

I've never tried jamaican patties before so I can't comment on whether it's authentic or not, but I work with pastry quite a bit, and this has to be the worst pastry to work with. Third cup of water is not enough to bring the dough together. I ended up handling the pastry more than I normally would. The result was a dry pastry.

Herb-Simmered Beef Stew

It tasted very bland. I think it needs tomato sauce or ketchup to liven the dish up. And, there was way too much potatoes. Didn't like it at all!

Apple Honey Bundt Cake

Lovely moist cake that is so easy to make. The hardest part of the recipe is peeling and cutting the apple (I don't have a grater; renting a temporary furnished apartment). This recipe is definitely a keeper! Thank you for sharing it.

Bahamian Style Peas and Rice

It tasted more like paella than peas and rice, but then I've only ever eaten the Jamaican peas and rice. Aside from that, my rice took more than 2 hours to cook!! And it did get burnt at the bottom, hence the paella taste. Not my favourite.

Trinidad Stewed Chicken

Very tasty, rich and nice, but thought it was too sweet. Would cut the brown sugar to half of a quarter cup next time. And, would definitely recommend the chilli flakes; it's listed as optional on the ingredients, but it is really a must because I think the spice would be good to cut the sweetness. I didn't use any coconut milk and used skinless thigh fillets. The chicken turned out very tender. Beautiful.
