Too Much Chocolate Cake

I made this as s birthday cake with "satiny chocolate glaze" (a recipe I also found on this site) and strawberries on top. It was moist and dense and got rave reviews. I was most concerned that it would get stuck in the pan, but I let it cool completely overnight and it ca I will definitely make this again.

Chicken and Pumpkin Goulash

This was delicious! I loaded up on tons of extra fresh ginger and simmered it on "low" all day (8 hours). This caused some of the pumpkin to break down and the ginger flavor to be strong but not spicy. I served this for guests and it was a smashing success. I will definitely make this again!!

Tuna and Chickpea Salad

This was DELICIOUS!! I didn't have black olives, italian parsley, or lemon. . . but instead I used green olives, dried italian herbs and red wine vinegar. It was amazing!! The friends who ate it with me also agreed. The only problem with my substitutions was the color- it was really bland looking.

Kona Chicken

Fabulous!! I used red wine because that's what I had at home and after tasting it I think the white would not be strong enough for my taste- a fortunate change! In the crockpot I also added a couple sliced carrots. I served it on a bed of rice, with a layer of sauteed greens, and topped with the chicken, carrots and sauce. Can I say again? Delicious!!

Spicy Tuna Fish Cakes

I used an albacore tuna and that was a mistake. They were very dry and fell apart in my pan. Don't get me wrong, they were DELICIOUS!! But I'll use tuna that is more moist the next time.

Chicken and Bow Tie Pasta

My dinner guests loved this but I thought it was a little bland. I had to add a lot of salt and pepper at the table, something I'd rather avoid. I like the ease of this recipe, but in the future I'll add more spice, and more onion and garlic to increase the flavor.

Tortilla Chicken Vegetable Soup

This was awesome soup!! I started with chicken legs, onion and garlic to make the broth and added a bunch of extra veggies- carrots, peppers and cabbage. Following other reviews I added more cumin and sprinkled a little extra in the bowl for serving. I don't have access to cilantro (which I LOVE!!) but this soup was well flavored without it.

Stuffed Cabbage Rolls

This was a delicious recipe idea that I freely changed to meet my own needs! But *surprise* this took a lot longer than I expected! I live in a country where beef is very expensive so instead I used tofu, chopped mushrooms, and 1/2 bell pepper, sauted in olive oil with mixed italian herbs and plenty of garlic. I took the advice of other reviewers and made my own tomato sauce using a large can of crushed tomatoes, a small can of tomato paste, finely chopped pepper and onion, more garlic, a pinch of brown sugar and a splash of vinegar. I put it all + 2 cups of chicken broth in my slow-cooker for 2 hours. I served it with a simple side of green beans w/toasted cashews and my dinner guests loved it!

Tomato Soup

I added 1/2 a sweet pepper to the mix of vegetables and blended it all together after cooking, like a couple of the other reviewers. It was fabulous! This was my first attempt at making tomato soup and I will definitely do it again!

Red Cabbage and Chickpea Salad

I LOVED this recipe!! I made my own dressing using sesame seeds and sesame oil since tahini is not easily found in my part of the world, and I substituted slivered carrots for the tomatoes. It was a beautiful and delicious dish! I will definitely make this again!

Vegetable Bacon Chowder

I loved making this purple soup! I mean, how fun is it to eat purple food?! It definitely needed some modifications, though. I started by cooking an onion is some of the bacon fat, then simmered the soup with 2 bay leaves, garlic salt and loads of black pepper. It tasted good, but still a little flat. I think next time I will start with stock instead of water.
