This was a delicious recipe idea that I freely changed to meet my own needs! But *surprise* this took a lot longer than I expected! I live in a country where beef is very expensive so instead I used tofu, chopped mushrooms, and 1/2 bell pepper, sauted in olive oil with mixed italian herbs and plenty of garlic. I took the advice of other reviewers and made my own tomato sauce using a large can of crushed tomatoes, a small can of tomato paste, finely chopped pepper and onion, more garlic, a pinch of brown sugar and a splash of vinegar. I put it all + 2 cups of chicken broth in my slow-cooker for 2 hours. I served it with a simple side of green beans w/toasted cashews and my dinner guests loved it!
