Whole Wheat Blueberry Pancakes

Excellent blueberry pancakes. Even my picky preschooler, who barely eats anything, ate an entire one and asked for another. I highly recommend that you try it. I loved the texture and that they do not spread too much. I doubled the recipe and cut the salt in half. Seemed like a lot of salt for pancakes. I'm freezing several for a quick weekday morning breakfast.

Turkey and Quinoa Meatloaf

Delicious! I ate mine plus my kids' portions too. They refused to eat it. I had to make a slight substitution because I found myself without an onion. I used about 3/4 of pico de gallo salsa instead. I also added the cup of shredded cheddar that others recommended. I loved it. Five stars plus!

Creamy Italian White Bean Soup

I made this with only minor modifications. I'm trying to save on groceries so I made it with dried white navy beans. It took about an hour to simmer to cook the dried beans after soaking. It was delicious. I'll definitely be making this often. It is economical and healthy too.

Peanut Butter Noodles

This is a great, easy and tasty meal. I added some veggies as suggested: cabbage, sprouts, and mushrooms. I'll definitely make it part of my regular menu.

Sweet Potato and Turkey Shepherd's Pie

This was pretty good. I found the texture and flavor good but not fantastic. I've made a healthy vegetarian version which is just as good. I didn't have the browning sauce of worcestershire so perhpas it would have been better with those added. It did make a fair amount and looked good out of the oven.

Oat Bran Muffins

I was looking for a healthy muffin to make and freeze. I just made these up this morning. I did adjust the recipe. I reduced the oil, halved the baking soda and powder and added vanilla and cinnamon. They turned out pretty good. I thought that they were a little sweeter than I thought they would be. I might cut down the sugar next time. Overall, pretty tasty. I put several in the freezer to save for busy mornings.
