Grandma's Gingersnap Cookies

These were awesome! I used salted butter instead of shortening and omitted the salt. I also probably doubled the cinnamon. They turned out perfectly flat & chewy- I baked them for 10-12 minutes. I will definitely make these again next time I have the urge for ginger cookies!

Eggless Tofu Spinach Quiche

I really like tofu but this tofu quiche did not turn out quite right. Maybe it was me, but I don't think I'll be attempting this recipe again.

Pumpkin Turkey Chili

This is a really good spin on chili. After reading reviews I did make some changes: added one can of black beans and one can of corn, more chili powder, some cayenne pepper, cumin and coriander, and some chicken broth to make it less thick. It was delicious and I will definitely be making it again!

Potato Cheese Soup

delicious! I am not big on measuring and i only used what i had on hand (ie cheddar instead of swiss, no celery) but it turned out amazing and very filling. I normally don't even like potato soup but I loved this!

Cheddar Dill Muffins

I really enjoyed these (and so did the husband!). I didn't have an egg so i added a little water, oil and extra baking powder to substitute. I probably added more cheese than called for but I didn't measure it. Tasty!

Spinach Brownies

These were a tasty way to eat some greens. I used swiss chard instead of spinach and parmesan cheese instead of mozzarella (and less of it). i sauteed the onion with some garlic first. Maybe because of the change in cheese but adding 1tsp of salt was way too much. They were still good but a tad too salty for my taste. I would definitely make them again!

yum! it turned out perfectly in my preheated cast iron skillet. mine only needed 25 minutes to bake. this will definitely be my go to recipe for cornbread!

Chicken Tortilla Soup I

Definitely a good, hearty soup. i substituted the oregano for cumin as suggested and more chicken broth instead of water. I feel it could use more flavor still but i'm not sure what! Only topped it with cheese because that's all I had on hand. Still good. Would make again and try to make it a little more interesting!
