Low-Carb Chocolate Swirl Cheesecake

Reviewed: Jul. 4, 2012
This cheesecake is an excellent "healthy" version of a very unhealthy original. I made this cake the first time trying to cut more calories by using FF cream cheese....BIG mistake. It ended up tasting nothing like cheesecake. Even my boyfriend who loves every creation I come up with didn't like it. The second time I made it I used 2 regular cream cheeses and 1 1/3 less fat cream cheese. Came out awesome! I also used sugar free pecan shortbread and macadamia nuts for the crust, put those in the food processor for a little bit until they were small crumbs. I also added cinnamon to the crust which gave a really nice flavor. Overall great recipe!

Stuffed Zucchini

Reviewed: Oct. 18, 2010
This was really good. I did change it up a little to make it healthier. I used lean ground beef instead of the pork and I used brown rice instead of bread crumbs. I also added a sauteed onion and 4 cloves of garlic.

Karen's Baked Banana Stuffed French Toast

Reviewed: Oct. 7, 2010
This was very good!! I like to make recipes healthy so I used whole grain wheat bread, skim milk and egg beaters and it tasted awesome. My only complaint was that, like others have said, there is not enough egg mixture so next time I will make a little more of it. I topped mine with sugar free syrup, a little sugar free reddi-whip and an extra sprinkle of cinnamon.....delicious!

White Chocolate Macadamia Nut Cookies III

Reviewed: Jul. 5, 2011
Very good taste. However, a little too dense. Maybe too much flour? Would have liked that better if they had a more chewy, cookie like texture.

Fluffy Peanut Butter Frosting

Reviewed: Jun. 29, 2012
This peanut butter frosting is amazing! Its not greasy, frosts well and tastes great. I made it with Jif's Omega 3 creamy peanut butter and it turned out great. I used my Kitchen Aid mixer to make this and I ended up having to use about 4.5 TBSP of milk and I let it go in my mixer for about 2-3 minutes so it was nice and fluffy. I put this on chocolate cupcakes.

Too Much Chocolate Cake

Reviewed: Jun. 29, 2012
This is a five star recipe! However I did not follow the recipe as written (I know what you're thinking!). I did not want to go to the store so I used what I had. I used a 3.4 oz box of vanilla pudding mix and a 6 oz. container of fat free plain greek yogurt instead of the chocolate pudding and sour cream. I also scaled down the wet ingredients a tad to compensate for the decreased amount of dry ingredients. It turned out amazing! I made them into cupcakes, baked them for about 14 minutes on convection. They turned out like the "perfect" cupcake! They rose nicely and were moist and chocolatey!

Smashed Cauliflower

Reviewed: Jul. 2, 2012
This recipe is very tasty! It is a good sub for mashed potatoes but has a very different taste and texture. I used only 2 c. chicken broth and drained off the extra after it was done cooking. I also added some minced garlic to the cauliflower while it simmered. I added a big dollop of fat free plain greek yogurt and not as much cheese as the recipe calls for, mashed it up by hand and it turned out great! My boyfriend said he likes it better than mashed potatoes!
