Low-Carb Chocolate Swirl Cheesecake
This cheesecake is an excellent "healthy" version of a very unhealthy original. I made this cake the first time trying to cut more calories by using FF cream cheese....BIG mistake. It ended up tasting nothing like cheesecake. Even my boyfriend who loves every creation I come up with didn't like it. The second time I made it I used 2 regular cream cheeses and 1 1/3 less fat cream cheese. Came out awesome! I also used sugar free pecan shortbread and macadamia nuts for the crust, put those in the food processor for a little bit until they were small crumbs. I also added cinnamon to the crust which gave a really nice flavor. Overall great recipe!

Smashed Cauliflower
This recipe is very tasty! It is a good sub for mashed potatoes but has a very different taste and texture. I used only 2 c. chicken broth and drained off the extra after it was done cooking. I also added some minced garlic to the cauliflower while it simmered. I added a big dollop of fat free plain greek yogurt and not as much cheese as the recipe calls for, mashed it up by hand and it turned out great! My boyfriend said he likes it better than mashed potatoes!

Too Much Chocolate Cake
This is a five star recipe! However I did not follow the recipe as written (I know what you're thinking!). I did not want to go to the store so I used what I had. I used a 3.4 oz box of vanilla pudding mix and a 6 oz. container of fat free plain greek yogurt instead of the chocolate pudding and sour cream. I also scaled down the wet ingredients a tad to compensate for the decreased amount of dry ingredients. It turned out amazing! I made them into cupcakes, baked them for about 14 minutes on convection. They turned out like the "perfect" cupcake! They rose nicely and were moist and chocolatey!
