Chimichurri Sauce

This was a good marinade for the tilapia, that I made last night. I added more garlic, red wine vinegar,and a little pinch of sugar. I covered the fish with the sauce and a can of diced tomatoes. Baked for 30 minutes at 350. Topped with a sprinkling of parmesan cheese. Turned out really well.

Warm and Spicy Autumn Punch

I've been making this recipe every fall/winter for a few years now. While it's great on its own, I keep a bottle of apple flavored rum next to it, for those that want a little extra.

Mango-licious Tilapia

This was a very refreshing recipe on days when it's too hot for anything heavy. I added a little garlic and sesame oil to the fish (goes well with the ginger), and I cheat and buy prepared mango salsa at the grocery store. I let the fish sit in the mixture for about half an hour before baking. Served over whipped parmesan cauliflower, and I'm set for dinner and tomorrow's lunch.

Asian Lettuce Wraps

My sister and I are vegetarians. Yesterday, we challenged ourselves to go a week without bread, pasta, grains, etc.... Very hard to do as we feel that's what fills us instead of meat. I was looking for a good recipe besides our normal pasta, veggie burgers, fruit, and veggies. I came across this recipe and thought that I could make it using Vegetarian Ground Beef (I prefer Boca). It worked out perfectly. I just made it all in one pot. I substituted ground ginger for fresh and left out the chile and chestnuts. Used a little extra soy sauce, and we toasted some sesame seeds and chopped cashews for some crunch. Next time, I think I'll add some bean sprouts.

Black Bean and Corn Salad II

It's not the worst thing I've ever had, but I was definitely disappointed in the money, time, and energy I put into it. Something about it just didn't mix well. Even after coming back to it later, I wasn't impressed. It has all my favorite things in it! It sounded great when I read the recipe, and it looked beautiful, but I found myself trying to fix the flavors. I finally gave up.

Broccoli Lasagna

Great meal, but a lot of work. I'm not the most efficient person in the world, but I've never had to clean up so much after one casserole. Overall, it's a wonderful dish, but I think I'll save it for special occassions.

Spinach and Orzo Salad

This is a nice, quick recipe that's easily adjusted for a few friends or a large group. My sister, the culinary student, now wants the recipe. In my version, I added some diced tomato and served it with flat bread wedges. Thanks for sharing!

Baked Potato Soup V

Wonderful recipe for people new to making soup. It's also an easy recipe to accomodate to your tastes. I'm a vegetarian, so I took out the bacon. I also substituted vidalia onions for green onions and replaced the whole milk with skim. You can try soy bacon bits, but I find they become soggy. Also try adding chopped potato skins (it has all the nutrients) to the soup to make it chunkier, or add milk continuously to thin it out. Even though I now need a full membership to the local gym due to this soup, it's worth it. Thanks!
