About this Cook
My favorite things to cook
Figuring out the best ways to turn meat dishes into vegetarian ones without losing the essence of the dish. I've made meals that even my dad is fooled by.
My cooking triumphs
I fixed a vegetarian Thanksgiving meal. No tofurky allowed, and everything from scratch.
My cooking tragedies
Ugh... a cherry clafouti I made on a whim. I didn't even want to touch it. How I could mess that up, I don't know, but the whole thing was a soggy mess.

Chimichurri Sauce
This was a good marinade for the tilapia, that I made last night. I added more garlic, red wine vinegar, and a little pinch of sugar. I covered the fish with the sauce and a can of diced tomatoes. Baked for 30 minutes at 350. Topped with a sprinkling of parmesan cheese. Turned out really well.

Warm and Spicy Autumn Punch
I've been making this recipe every fall/winter for a few years now. While it's great on its own, I keep a bottle of apple flavored rum next to it, for those that want a little extra.

Mango-licious Tilapia
This was a very refreshing recipe on days when it's too hot for anything heavy. I added a little garlic and sesame oil to the fish (goes well with the ginger), and I cheat and buy prepared mango salsa at the grocery store. I let the fish sit in the mixture for about half an hour before baking. Served over whipped parmesan cauliflower, and I'm set for dinner and tomorrow's lunch.
