Paul's Pumpkin Bars

These are actually Paula Deene's Pumpkin Bars taken directly from her show in 2009. They are, in fact fabulous...moist, flavorful and downright yummy. I added 1/2 tsp ground ginger, 1/2 tsp. ground nutmeg, and 1/2 tsp ground cloves and reduced the cinnamon from 2 tsp to 1 1/2 tsp. Increase the baking time to 40 minutes. Everyone loves them!

Salsa Chicken

This was quick, easy and very tasty. The only addition I made was sprinkling it with chopped cilantro after taking it out of the oven. I served it with Mexican rice, black beans, salad and tortillas. I am cooking for a large crowd next month and will use this delicious and easy recipe. Definitely a keeper!

Easy Pork Roast

This is definitely a keeper recipe. The aroma of it cooking was as heavenly as it tastes. I baked it in a high sided cast iron skillet, but next time I will try it in my small slow cooker. I wasn't sure if the recipe called for 10 whole shallots or 10 shallot cloves as there is so much from the onion family in the recipe. I used 10 shallot cloves and only one large onion and it was awesome. Served it in a bowl with crusty French bread and a Caesar salad. Comfort food at its finest!

Savory Chicken Breasts

I have been making this recipe (with minor changes) for years, our family affectionately dubbed it "Gooey Chicken." My minor changes are substituting wine for the milk and seasoned stuffing mix (Pepperidge Farm) for the topping. I also mix the butter with the topping before putting it on the casserole as it bakes up more evenly and crisper. It is a family favorite and a crowd pleaser every time.

Martha's Hot Almond Spread

This is my "go to" appetizer when I need something yummy and easy. The flavor combination of swiss cheese and almonds is wonderful, and this dip is always one of the first of the empty dishes on the appetizer table. I serve it with Wheat Thins or any other similar cracker.

Orzo and Shrimp Salad with Asparagus

The first time I made this I followed the recipe as published and found it to be rather bland, but with possibilities. So the next time I made it I added chopped red pepper, sliced black olives and cherry tomatoes. I used cooked shrimp, so instead of boiling the shrimp shells, I added Old Bay and a dab of anchovy paste to the pasta water for added flavor. And finally instead of using the dressing suggested I combined a little light mayo with light champagne dressing for a rich and creamy dressing. Yes, I know, I completely changed the recipe, but that's the beauty of using recipes from Allrecipes, it brings out the creative cook in me!

Cherry Bomb Chicken

Made this tonight with chicken thighs and it was fabulous. Just the right amount of heat with 3 habanero peppers, just enough to make a party in your mouth! Don't change a thing, and do use Sweet Chili Sauce, it was the crowning of a wonderful recipe, the brine was perfect. Chef John, you have done it again. Saving this one for a family dinner this summer!
