Asian Mushroom Soup

This was good right after making but was outstanding as leftovers, same as most any soup. I used sherry instead of mirin and added some enoki mushrooms as well. Used Korean soy sauce with kelp extract (much lower sodium than regular low sodium, 285 vs 575). As leftovers I added "Pot Stickers, Traditional" instead of udon and chicken.

Sour Cherry Sorbet

I have never seen a fresh sour cherry here in TX. When I ran across this recipe I knew I had 2 cans of sour cherries in the pantry so I experimented with those. I drained and gently pressed the cherries to remove canned liquid and find any missed pits. Used 1/2 cup sugar (we like tart), 2/3 cup Knudsen Just Tart Cherry Juice (to replace missing juice from missing fresh cherries), 1/2 t almond extract, and instead of the wine and salt I used probably 1/3 cup vodka (out of white wine). Mixed in the blender and then chilled and froze in Kitchen Aid ice cream bowl then into the freezer to ripen overnight. The texture is perfect. We like to top with chopped Amarena cherries.

Marinated Grilled Shrimp

3.5 Not bad but I probably wouldn't make again. I scaled but upped the garlic and marinated for about 5 hours. Served over a grill and chill salad (very lightly grilled veggies that were then chilled before tossing with lettuce and dressing) for a light meal on a hot day.

Sparkling Green Tea Lemonade

I changed it up a little bit. Only half cup boiling water over 3 tea bags. Chilled that then used 1/4 cup for each of 2 servings. Instead of sugar I used 5 drops stevia and used 2 pkts True Lime per serving. Added it to a large mason jar and filled with ice and seltzer. Very refreshing. Have now made this with True Lemon and True Orange as well as the True Lime, 2 pkts each time. So Good!

Lenie's Herbal Fish

I didn't cook veggies first, just piled veggies on a sheet of foil, topped with fish, (seasoned salt and lots of pepper on fish) drizzled with evoo and balsamic (more balsamic to taste), sealed it up and popped in toaster convection oven. Used dried basil and cilantro cuz I was out of fresh. Didn't have the zucc but added in some broccoli, it worked. Served over brown rice. Really enjoyed it, thanks!

Mushroom Bolognese

A little bit of mushroom heaven....Seriously, if you try to feed 6 with this it will be "little". They will then slap you for teasing them with a tiny bit of heaven. I served the whole amt to 2 for a hearty serving. I stuck to the veggie amts but also added about 6 button mushrooms. Didn't measure so much as eyeballed. Only thing I really changed was the beef broth and used maybe 4 t tomato paste. I used reduced sodium broth and ended up with about a cup and a half reduced down to almost nothing before adding cream. Added enoki with the broth and didn't brown, chopped before cooking. Served over shirataki noodles instead of pasta, added them before cream to soak and flavor. Topped with Reggiano, garlic cheese bread on the side. Fabulous!

Popcorn Seasoning

I played with this mostly to reduce salt. I used 4 T nutritional yeast (cuz I had it on hand), 1 T garlic powder, 1 T celery salt. For paprika I used spicy Hungarian so left out the cayenne. Blended it up in mini chopper. Made this up to have on hand but my taste test was so good I made popcorn immediately.

Added ~1 cup mini choco chips, ~1 cup craisins, and 1 T oj concentrate. Glazed with 2 T oj concentrate mixed with icing sugar. Will divide into 2 rounds next time.

Slow Cooker Italian Beef for Sandwiches

I used chuck roast, cut up and tossed into pressure cooker. BOLD beef stock instead of water, skipped salt, and used home made "Italian Dressing Mix", also without salt. Added a couple Hot Cherry Peppers. Removed meat then reduced liquid till thick then added beef back to toss before serving. Really good served on my modified version of "Italian Cheese Bread" with horseradish sauce.

Addictive Sweet Potato Burritos

I had everything to make this (really sorry I waited so long) but didn't feel like making beans from dried. Remembered I had some overdone navy beans in the freezer. I used those and since they were all mashed added a can of Ranch beans with jalapeños. Cubed and steamed my sweet potatoes and mixed them in like that instead of mashing. I really wanted more heat so used a can of Rotel instead of any water, will use extra hot Rotel next time. Used in burritos, as dip for chips, as topping for tostadas. All VERY good. Skipped the cheese half the time and didn't miss it at all.

Jumbo Fluffy Walnut Apple Muffins

I used this as a jumping off point. Reduced sugar to 1 c. 1 cup flour and 3/4 whole wheat. Used 4 apples, grated. Added in 1/4 c each of ground flax meal, wheat germ, and chia. 1 cup walnuts. Upped milk to 3/4. Sprinkled top with turbinado sugar instead. Ended up with a dozen using 4 oz scoop, plus one mini loaf. Mind, my additions/changes do not turn out a fluffy result.

Homemade Black Bean Veggie Burgers

These were great. I did everything by hand, chopping and mashing. No problem with being runny or falling apart. Rinsed the beans and left them to drain for at least an hour then tossed them in a paper towel. Used 5 cloves of garlic and added 1.5 t of liquid smoke. A little more bread crumbs because there was just a little left in the container. Used the suggested chipotle mayo to stay with the flavor profile and topped with lettuce, tomato, and avocado.

Vietnamese Fresh Spring Rolls

I mix the fish sauce combo and hoisin and chopped nuts all together, then add some peanut butter as well. To send to school for lunch I roll them into parchment paper, keeps them from sticking together and maintains moisture level.

I'm a big tweaker but there are no tweaks that could make this recipe any better. The best side dish for this recipe is a casserole of compassion, obviously doubled or tripled. I find hugs make a perfect ending for this recipe.

Vegetarian Stuffed Red Bell Peppers

I fix my quinoa 1:1.25. I had 2 very large peppers and didn't use even half the quinoa so will cut by half next time. Cooked the quinoa with 3 cloves of sliced garlic and used Better Than Bouillon chicken flavor. Not vegetarian but still meatless. I added about 1/2 cup of cooked barley. Dried mint cuz I didn't have fresh. Added 3 oz of ff Feta. I haven't eaten a stuffed pepper in 40 years, just not a fan of regular meat and rice versions. This version was terrific and will be used often.

Spicy Salmon with Caramelized Onions

Sugar in the "paste" made fish start to blacken so I added some water to pan. Served resulting "sauce" on fish. Used half a sliced onion per serving. Used regular paprika then added 1/2 t Hungarian paprika as well. Served with wilted spinach.
