Coconut Ice Cream

I had a can of Coco Lopez lite hanging around so used it for this. Left out the coconut. Served Almond Joy-ish. Scooped ice cream and drizzled with ganache then sprinkled with toasted chopped almonds and toasted coconut. Delish! EDIT: Made again with full fat Coco Lopez and just half and half. Worked great.

Chef John's Sloppy Joes

I did this with previously steamed lentils instead of meat. I used a whole onion and only maybe a half cup of water since I didn't want lentils to go mushy. Also used yellow mustard instead of dijon, bumped up the W to 5-6 good dashes.

Hot Tamale Pie

Didn't have poblanos so I added a couple of minced jalapenos, forgot the corn. All cheese inside and used 1.2 of ground turkey instead. Added a chopped up red bell and lots of black olive slices. Went back and forth trying to decide on half or full recipe. Went with full and so glad I did. LOVED it. And as I like to do, I drizzled with honey before eating.

Light Lemon Pesto Pasta

Dd had recently requested pesto and BN had just mentioned her Warning! on the Buzz so I decided to give this a whirl. I had my head in a good book so I ended up mucking this up...over cooked my pasta a tad, over processed pesto, spinach wasn't really dry enough, not enough lemon juice (so I used all the zest of the one lemon I had.) Still, with my poor execution dd gave 2 thumbs up!

Baked Cod with Boursin Herb Cheese

I used this idea on tilapia because dd prefers it to cod. Fresh diced tomato with sliced onions and garlic instead. Homemade version of "Boursin on a Budget" by covergirl. Served over lemon basil flavored cauliflower "rice".

Lemon Honey Glazed Carrots

Dd LOVED the honey, lemon, ginger combo. (I did add garlic) First bite..."Is there ginger? (I used fresh grated, all I had) Yum. This is so good! I like this so much better than the orange juice version. Make this A LOT more, ok?" Winner , winner, chicken dinner!

Boursin on a Budget

Why did I wait so long to play with this???? I didn't even come close to following the recipe so my rating is based strictly on how happy I am with the outcome. No way I needed 3 cups. I used 2 oz of neufchâtel. I recently tried making my own Greek yogurt. I put that in the fridge to drain overnight so it was VERY thick. I used appx 2 oz of that instead of butter. I probably used the full amts of herbs so this was BAM! We like BAM! It has only been sitting a few hours, tomorrow I might add a little more yogurt and neufchâtel if needed.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Only made the sauce. Out of honey so skipped. Instead of 1/2 T of cayenne I used 1.5 t of chili flakes. Was just right. I used this on country style pork ribs. Used Hog Rub and Yard Bird and let them sit overnight. Smoked in stovetop smoker. Cooled. Broiled with sauce on low. Delish!

Costas French Market Doughnuts (Beignets)

Maybe the missing "something" was my not using evap milk but I'm not a fan so I subbed half and half. We ate some fresh and hot, the leftovers went in the bin. Scaled to half so I had about 2/3 of the dough left. Next day I patted it out and let it rise, dimpled then dusted with herbes de provence. Baked then drizzled with garlic butter, made a tasty focaccia style garlic bread to go with spicy lasagna. Since it's slightly sweet, a bit like Hawaiian bread, it would be good to make a large Schlotzsky's size sammy with this>>> "Baked Hawaiian Sandwiches".

Oven Baked Garlic and Parmesan Fries

I heated the sheet pan while preheating the oven then sprayed with Misto before adding potatoes. Cut rounds for ease of flipping. Out of thyme so skipped. Pecorino instead and garlic powder instead. Dd approved which means I'll be making again soon.

Thai Orange Chicken

I played. Added half a sliced yellow pepper and a bit of diced red pepper. Only one blsl breast sliced thin. 2 t pepper flakes, 1/2 cup water with 3 T oj concentrate, 1 T low sod Tamari, more garlic, added 2 t fish sauce, forgot the nuts. Forgot to add: I peeled an orange and used a grapefruit spoon to scrape off all the pith then thinly sliced up and added in with the peppers.

Corn, Sausage and Pepper Chowder

I played with this. Only red bell pepper, added in a cup of leftover black beans, 1 can each of corn and creamed corn. Instead of milk or cream I put immersion blender over a few potato pieces and blended. Topped with a little pepper jack and cilantro.

Prissy's Pizza Dust

RUN to your kitchen and make this, you will not be sorry. This Pizza Dust knocks any pizza out of the park. I basted my crust with garlic butter then sprinkled on. Added a little more after topping. I put everything in my mini chopper and blended it all together.

Lime Cilantro Cauliflower "Rice"

Balsamic Glazed Carrots

Cut larger baby carrots in quarters lenthwise for faster cooking. Skipped the oil, cooked in a small amt of water, and slightly reduced the sugar. Def a make again.

Baked Parmesan Tilapia

Left out the salts. Skipped steps, no flour or dipping and I didn't oil the crumb mix. I used Chef John's Ranch and only basted the tops then generously sprinkled crumb mix on top and pressed in. Sprayed crumbed top with evoo before baking. Really good. The ranch isn't prominent and that is a good thing in my book. Served with basil cauliflower "rice" and balsamic carrots.

Pad Thai Popcorn

Started to make this and remembered I was out of canola so...I used coconut oil in the sauce. Used half a cup of popcorn and would go heaping next time, there was enough sauce to cover. Since there was a hot element to this I used hot chili oil to pop the corn. Even with that and a full T of Sricacha I would have liked more heat. Added cilantro to each serving instead of the whole batch for ease in storing leftovers.
