Baked Sweet Potatoes with Raisins and Pecans

This was pretty good. I used 5 potatoes and had to layer them. I baked them at 375 for about an hour and they were perfect.

Spinach Quiche

This is good. I used 2 eggs and 2 egg beaters. I also cut the cheese back to one cup and added mushrooms. I topped it with crushed crackers and parmesean cheese.

Banana Bran Muffins

These are so good! I'm going to change my breakfast routine to include this and a cup of yogurt. I used half whole wheat flour, half all purpose, and added wheat germ. Next time I'll add some flax seed meal. Thanks for a great muffin!

Flourless Peanut Butter Cookies

The best peanut butter cookies ever!!! I used natural peanut butter and 1/2 cup white, 1/2 brown sugar. I'll cut back on that the next time. I got 2 dozen cookies made with batter left over, they are great!

Delicious Peanut Butter Cookies

Easy Red Beans and Rice

Going on the advice of other reviews I added more spices to make it hotter. It worked! I added red pepper flakes and Louisiana hot sauce. Hubbie loved it, which makes this a keeper!

Addictive Sweet Potato Burritos

I try to cook vegetarian at least twice a week and was starting to have trouble finding new recipes. This was GREAT! Not the easiest thing to make with a 16 mo old under my feet, but worth the trouble.

Awesome Sausage, Apple and Cranberry Stuffing

I made this for Christmas eve dinner and it was great. I used turkey sasuage, and more wheat bread then white. I left out the sage and liver and used some dried cranberries and raisins. All in all, it was very good!! Husband is doing the dishes and the baby is heading to bed, what a great day!
