Rich Chocolate Frosting

Definitely only need 1/2 recipe for 2 layer 8" cake. It's not bad but I did find it too cocoa-y even though I followed the recipe exactly (by half). I added a bakers chocolate square to try and even out the chocolate flavour but it didn't really work. Probably won't make this again. *UPDATE: this frosting is definitely better room temperature on the cake. It was a hot day so I had the cake in the fridge and the icing didn't taste the best, but when I left it out afterwards the warmer up icing was definitely better.*

Vegetarian Chickpea Sandwich Filling

I thought this was quite good. Chickpeas themselves are a bit bland, so I added a little bit more mayo/lemon juice/dill than the recipe called for. I also added some ground mustard. I like the option that I can swop the mayo for veganaise and have a good vegan sandwich filler.

Quinoa and Black Beans

I thought this was very good. My husband found it a bit bland, but I added salt, and ate with sour cream and thought it was pretty good. I also enjoyed the cold leftovers the next day. I may try to tweak it again in the future to better suit my husband's tastes.

Groovy Green Smoothie

I thought this was a great idea, and a good base recipe that you can use to suit your own tastes. I have tried various versions - with vanilla flavoured yogurt, with tropical yogurt blend, with/without apple, etc....and I haven't really had a bad batch yet. My only tip is to use frozen spinach and not dethaw it. I just put it in with my ice and blend it, then add the rest of my ingredients and it turns out yummy....AND HEALTHY!

Fluffy Pancakes

BEST. PANCAKES. EVER. My husband and I are pancake snobs and are very critical of restaurant varieties. We have one place we go to that has "the best" and I've never been able to duplicate them at home. Well these are BETTER. I couldn't believe that my husband even agreed. I made exactly as written but added blueberries and it was to die for. AMAZING! THANK YOU!!

Vegetarian Gravy

I am a vegetarian and have been on an endless trek to find a good veggie gravy. I was very excited to try this based on its good reviews but I was sooo disappointed. I tried incorporating the other reviewers tips - using butter instead of oil; cutting down both the butter and flour to 1/4 cup; omitting the salt due to using regular soya sauce... I'm a big garlic fan but was suspicious about 5 cloves, but, against my better judgement, I went ahead and threw them all in and MAN - it was WAAY too garlicy. And coming from me, that should tell you something. It probably didn't need more than 2 cloves. Even besides that, I thought it tasted a bit "funky". I may try to play around with this more in the future, but for now I'm back to my powdered organic veggie gravy packets I buy at the grocery store...

Buttercream Icing

I have made this recipe so many times and every time I make it I literally *always* get asked for the recipe. I make it exactly as written and I find it does not taste like shortening. It is definitely really sweet, but if you're looking for buttercream icing, you're looking for sweet. My husband just takes a spoon and eats it right out of the bowl (who needs the distracting cake part anyway, right?). HIGHLY RECOMMEND THIS RECIPE.
