Double Layer Pumpkin Cheesecake

AMAZING!!! I used my own recipe for cheesecake and poured half of it into my gingersnap crust, then mixed the remaining half with canned pumpkin pie mix and carefully poured it on top of the first layer. Very delicious! I made it for Thanksgiving and served it with warm caramel sauce.

Potato Croquettes

These were tasty! I used instant potatoes and put 1/3 less liquid in them to make them thicker. I also used bacon bits and frozen onions. Hey, I'm just a college student! I rolled them in the bread crumbs and lightly drizzled them with olive oil and popped them in the oven, turning them every few minutes to get them golden all the way around. Great with ketchup or ranch dressing! Yummmm I first had these in Spain (croquettas) and my host mother made them all the time from left over potatoes and a protein - ham, bacon, pork... :-)

Chunky Cheesecake Brownies

These brownies had a good dense chocolately taste, however they were much too dense for me and everyone else who ate them. The cream cheese flavor was almost nonexistant, and the extra chocolate chips in the cream cheese was overkill. I will probably not make these again.

Basil Tomato Soup

AMAZING! This is just like my favorite soup at a restaurant. I will never again pay for this soup, I can make it at home!!! I doubled the basil, used vegetable broth, and milk instead of cream. I also halved the amount of butter. Delicious!

Jam-filled Muffins

Smells and tastes like pancakes or thick biscuits to me. I used black raspberry jam which gave it a delicate sweetness. I cut back on the sugar slightly too. I made 8 big muffins instead of 12 mini muffins. Probably won't make these again, they tasted too much like a biscuit than a muffin.

Hot Spiced Cider

Very delicious! I made it in a crock pot left on high for 20 minutes. To infuse the spices I emptied out a tea bag and places the spices inside. I then tied it up with a piece of thread. I didn't use the orange. Came out perfect! Definitely will make this again!

White Bean, Spinach, and Barley Stew

Good flavor, I added 1/2 a can of left over vegetable broth to make it a little more soup-like. Doubled the mushrooms and white wine. Needed something salty - I added parmesan to my bowl. Freezes well.

Harvest Pumpkin Cupcakes

Excellent recipe! The cupcakes came out perfectly; light, fluffy and delicious. Instead of making the cream cheese frosting I bought Duncan Hines Creamy Home Style Cream Cheese frosting and put the OJ and peel into it. The addition of the OJ made it a little liquidy, so I also added a few Tbs of powdered sugar to stiffen it back up. I made candied orange peels to place on top of each cupcake. Made 30 cupcakes and only took 25 mins to bake at 350 degrees. Will definitely make these again!

Homemade Peanut Butter Cups

Great! Tastes just like a Reese's!! Takes a while to make, but the end result is worth all the effort. Careful when melting the chocolate that it doesn't seize up on you. I added about 1 Tbs. of Canola Oil instead of the shortening to add a nice chocolate shine.
