Blueberry Lemon Bread

Was a huge hit at family reunion with both young and old. I followed receipt exactly with exception of not including glaze. It was perfect without the glaze - did not miss it at all!

To Die For Blueberry Muffins

Followed recipe instructions - came out brilliant! Only change was I used frozen rather than fresh blueberries as that is what I had on hand. Perfect, moist, crumbly topping. Kids devoured them.

Alice's Easy Blueberry Cake

So easy! I was feeling lazy so I just mixed the whole thing (except blueberries and flour) in my stand mixer. No mess - easy cleanup. Tastes great - definitely a must to add the butter and sugar. Will be a great breakfast cake/muffin or after camp snack for the kids with all the fresh blueberries in season over the summer.

High Temperature Eye-of-Round Roast

Who knew making a roast was so easy! This has become one of my go-to weeknight meals - always a hit with the family and the left-overs are just as good as the original meal. Have played with the seasoning a bit - found our family prefers it when I use Vegeta as a dry rub.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Huge hit with family and guests - small children and adults alike! I baked at 350 until meat thermometer hit 155, then took out and let rest and internal temp rise. So juicy! Served with white basmati rice, steamed green beans, and sweet potato ginger soup. Yum!

Extreme Chocolate Cake

I get rave reviews on this cake - have made it for 2 birthdays now. Consistent delicious results both times! Only change - didn't use the frosting - used store bought vanilla so I could colour the frosting and decorate.

Slow Cooker Lentil and Ham Soup

This was so easy to make - used the leftover ham from Thanksgiving - included the bone while cooking. Didn't have a bay leaf, but don't feel it was really missed. Was a tad salty, but wouldn't blame the recipe - probably was the ham. Just added more broth to tone it down a bit.

Shepherd's Pie VI

Everyone loved tonight's dinner! Even my picky little guy who NEVER eats cooked carrots finished his plate. My husband kept saying how light it was for Shepherd's pie - that he normally doesn't like it because it is too heavy. Minor modifications: I had some leftover butternut squash so I mashed it in with the carrots. Used turkey instead of beef as that's what I had on hand, did as others suggested and added some worcestershire sauce and peas to the mix.

Quinoa and Black Beans

My first time making quinoa - and it turned out fabulous! This has now become one of my favorite go-to dishes when we have guests. I make one tweak now though - I substitute Mango Salsa for the cumin and cayenne. Seems the kids like it better that way.

Entire family loved these. Doubled the sauce - only put cornstarch in half. Marinated in the unthickened sauce - then basted and dipped later with the thicker sauce.

Chicken in a Pot

Great dish - made some with bread crumbs and some without - great for a low-carb diet. Doubled the sauce and served over rotini pasta for the kids. Very easy to make and very little clean-up!
