Easy Valentine Sandwich Cookies

I made this with the full intention of doing the whole "sandwich" thing. Unfortunately my cookie cutters were kind of big and also a lot of the cutout hearts didn't match up well with the smaller hearts. So I decided to serve them as is, separately without frosting. The taste and texture was very good (I omitted the almond extract)... not a soft cookie but not super crunchy as long as you watch the baking time. I baked for about 7 minutes. I usually have a terrible, terrible time with sugar cookie dough being too sticky and impossible to roll out. However I followed suggestions of chilling the dough AND using confectioner's sugar to roll out as opposed to flour. It wasn't foolproof but it was a much better experience. I also divided the dough into thirds and colored one red and another pink. The cookies turned out well, I ended upw tih multicolored hearts, some with holes in the middle. I think this might be my next roll-out sugar cookie recipe. Remember to chill the dough and use confectioners sugar to "flour" the dough and your work surface. I handled the out of this dough and it didn't get tough or dry.

Too Much Chocolate Cake

Don't look any further. Just do this. It's amazing. My family raved and raved about how good it was! My 90-year-old grandfather, who's probably had many, many cakes in his lifetime, said it was the best chocolate cake he's ever tasted. No one will ever know that you used a cake mix. I don't have a big enough Bundt pan, so I used a round springform pan, greased and floured with cocoa powder. Baked at 350 for about 60-65 minutes. Like many of the reviewers, I made Satiny Chocolate Glaze and poured it on top for an incredible finish. AMAZING.

Cracked Sugar Cookies I

These turned out WONDERFUL. WAY better than Publix bakery's sugar cookies -and those are really good! I sprinkled red and blue colored sugar on them for Fourth of July and they not only looked awesome but they tasted great. Perfect texture and right amount of softness. I followed the recipe exactly as is. If you are looking to make killer sugar cookies - this is it! It's now my go-to recipe.

Downeast Maine Pumpkin Bread

I figure a recipe with more than 4,000 reviews had to be a good one and I was right! I made two loaves and a dozen muffins. I also thought there was a little too much oil and egg - so I changed to 1/2 cup oil and 1/2 cup applesauce and also 2 eggs and a 1/2 cup of egg beaters. It turned out super moist and was a big hit! I made it for my boyfriend and his friends on the first day of football season, and they had no idea I made the "healthier" changes. I intend to try it again with whole wheat flour and add some nuts next time.

Apple Butter Bars

These just didn't work out, and I was really disappointed considering I spent money on apple butter just for this recipe.. I added chopped apple instead of raisins and they completely fell apart when I tried to cook them. I had to throw out half. They definitely taste fine, but are just too hard to eat. Maybe they'd be better in cookie form? Or maybe it was the chopped apples that caused a problem?

Donut Muffins

I just made this for my co-workers and family. Quite the hit, everyone loved it! I didn't dip the entire finished muffin in the butter, just the top, and dipped the top in the cinnamon sugar. It made it look adorable.
