White Cheese Chicken Lasagna

Reviewed: Nov. 23, 2004
After spending a fews days visiting with some friends I prepared this as a dinner suprise.....my hosts LOVED it!!! I am a vegetarian, so I substituted a corner of it with faux chicken for me (smile) Either way, I braised my chicken in a broth along with onions, garlic, celery, oregano, sage, salt, pepper and a touch of olive oil. Even if I didnt cook my chicken in that manner, I believe that my hosts would have still been more than pleased. Thank you for such a wonderful recipe.

Grandma's Eggless, Butterless, Milkless Cake

Reviewed: Aug. 9, 2004
OMG.....This recipe is wonderful!!! Just playing around, I wanted to make a vegan cake and I was blown away with the taste. My neice and I prepared the recipe as directed and were more than happy with the results. I will admit that she was confused with the ingredients....."Auntie, were are the eggs" she asked. Will certainly make this again. Thank you for sharing.

Banana Cake VI

Reviewed: Jun. 8, 2004
This was a great recipe! It really didnt need any changes, however, I did make two changes. First, I added a very small amount of cinnamon...just a couple of dashes into the flour. Second, for the frosting, I halved the vanilla, and added some banana extract. Wow!!!

Banana Crumb Muffins

Reviewed: Mar. 4, 2003
I used this recipe as my weekly baking /cooking activity with my 3 year old niece. We cut the recipe in half (just in case she didnt like it)...but we should have made the full recipe! The recipe was great! 1/2 of the recipe filled 12 mini muffin molds with a litle extra to clean the bowl. This one will go into our Auntie and Mushie's Favorite Recipe Scrapbook/Diary that we update with each cooking project!

Cottage Cheese Roast

Reviewed: Feb. 2, 2002
I ENJOYED THIS RECIPE!! This loaf has nice onion flavor, a meaty texture and is a nice change from soy based veggie meats. I would suggest baking it for at least 1 hour (I baked mine for 65 minutes) and then letting it sit for about a half hour before eating it so that it has time to completly set. I'm sure that it will be even tastier tomorrow! The next time that I make it, I will add a little extra cornflakes (2 cups) and maybe a little packaged meatloaf seasoning. I'm really pleased with this one. Thank you Mary Ann.....My suggestion to everyone....TRY IT!

Indian Dahl with Spinach

Reviewed: Jan. 25, 2002
I've been looking for a dahl recipe for awhile and this one turned out really good. I made it more of a Chana Saag though. Which means that I added more spinach and chickpeas. I also added more salt(1tea), more garam masala(1tab) and a little red pepper(1tea). I eat Indian food alot, so this recipe will certainly become a part of my rotation of dinner meals.

Aunt Millie's Broccoli Casserole

Reviewed: Dec. 22, 2001
I LOVED THIS RECIPE!! Let me explain something here...I am one of the most pick eaters in the world, but this this was really good! I did alter it just a bit though. I boiled my broccoli with butter and garlic. Next, instead of the American cheese, I used cheddar and I also used the ritzs crackers. Oh yeah, I added a little (and I mean little) bit of garlic powder and about 1/4 cup milk.(The mix of soup and cheese seemed to thick for me)IT TURNED OUT VERY CREAMY AND THE TASTE OF FRESH CRACKED PEPPER.....YUMMY :o) I am attending a X-mas dinner party on the 24th and this is the vegetable dish that I will be bringing!

Vegetarian Sweet and Sour Meatballs

Reviewed: Dec. 28, 2003
This was really good. I selected this recipe today because I have been looking for meaty dishes without soy. I followed the recipe step by step up until the baking. I baked mine longer than what the recipe called for. (my total cooking time was 1 hour) I didnt realize that the balls would firm up a bit more AFTER cooking, so my 'meaty'-balls became a little hard. I dont know, they just seemed too soft at 40 minutes. But even when hard, they were good. My mother enjoyed the flavor of the sauce. Also, I cooked one of the 'meaty'-balls plain(without the sauce)it was wonderful. I ate that one after cooking 40 minutes. I guess that one seemed right(more done) because it was dryer than the ones with the sauce. I will use this recipe when making spagetti from now on. (bake them and then just throw them in the spagetti sauce. Lastly, I dont know who well they freeze, but I'm gonna try.
