Fish Chowder
Really happy with my first attempt! Family has all given it the thumbs up. Here are my notes: Used cubed Mahi and diced shrimp. My batch wanted more salt and Old Bay. Used white pepper for a spicier flavor. Wish I would have only used one can of Evaporated milk for better liquid solid ratio. Might swirl in a dash of sherry before serving. Great base recipe with so many possibilities!

Quinoa Black Bean Burgers
Helpful hints: Add everything together except the egg and taste it before forming the patties. This will give you a chance to adjust the flavor. After forming burgers, let them rest in the fridge for 30 minutes and they'll stay together. I went rogue and added 1/2 c small dice portobello mushroom. I wanted to add more umami flavor. I also did a quick sauté in the oil with the mushroom, onion, bell pepper, garlic and cumin. Adding salt and freshly ground pepper to taste. I let it cool before combining with the rest of the ingredients. Toasting the cumin brings out the flavor. The burgers were formed in 1/3 c patties and grilled on the panini press. No added oil on the non-stick surface. Huge hit for my junk food loving family.

Kheer (Rice Pudding)
Made this to bring to friends' Indian themed dinner. Really lovely texture, just the right sweetness, and a divine aroma. Used almost exact recipe except used vanilla sugar (sugar stored with vanilla bean in it), couldn't find rosewater, and had whole cardamom what I steeped in the milk. Took the recommendation of others to simmer for closer to an hour. Served chilled. Garnished with toasted almonds and dusting of Saigon Cinnamon Made 6, 1/2 cup servings.
