Fluffy French Toast

We used day old French bread and mixed it in the blender, so the cinnamon floating at the top was not an issue as it was with some reviewers. We loved it and will use this recipe every time we make French Toast. Delicious!

Lemon Cream Pasta with Chicken

I made this last night and we loved it! The only thing I changed is the time on the pasta, as mine was perfect in about half the time. Other than that, I made no changes. I was skeptical at first with the way the pasta is prepared, but I'm happy I didn't shy away from following the directions. It was delicious. This would taste great with some artichoke hearts or fresh mushrooms, but it is also great the way it is. This will definitely be included in our regular rotation!

Pumpkin Spice Cupcakes

I just made these for my son's school Halloween party and it's a good thing I had to give most of them away, or I probably would have eaten half a dozen of them before my kids even got home from school! They are wonderful! Even the frosting is amazing, and I don't really like frosting. I followed the recipe exactly, but I did take them out about 5 minutes early, and they were perfect, moist and delicious! I put a little candy corn on the top for fun, and they turned out to be the perfect Halloween treat. These will be a new fall and Halloween tradition in my family. Now, who else can I make these for...

Seven Layer Tortilla Pie

Wow! I loved this recipe! I must say I am surprised how delicious this is. It looked good enough to give it a try, but I didn't think it would be as good as it is! It was super easy and the whole family loved it- even my 8 year old self-proclaimed bean hater loved this and said he wants me to make it again and again. I followed the recipe exactly (although I was generous with the cilantro since I love cilantro), and I think it has plenty of flavor and the tortillas were not at all soggy. It was perfect as is. We will definitely be adding this to our regular rotation!

Quick and Easy Green Chile Chicken Enchilada Casserole

I stumbled across this recipe just now and saw that it's basically the same recipe I've been making for years, only my recipe includes a small can of chopped olives, a 1/4 tsp. of garlic powder, and a small chopped onion, and I like to throw in a can of diced green chilies. The recipe is basically the same, but the preparation is a bit different. I mix the sauce, cheese (saving 2 cups of cheese for top), sour cream and chicken in a very large bowl, and then I tear up the corn tortillas into pieces (without any charring), and fold them into the mixture. I spread it in a 9x13 casserole dish and sprinkle remaining cheese on top. I bake uncovered at 350 for 30 minutes or until bubbly and then let it sit for 5 minutes before serving. You can't get easier and it is delicious! This has been in our regular rotation since I came across it 5 years ago. My husband loves it, my picky kids love it, and everyone I've ever served it for has loved it. When I'm super crunched on time, I've used 2 cans of chicken (even though I really don't like canned chicken) instead of cooking 4 breasts, and onion flakes (hydrating the flakes before adding) and it's still very delicious and even quicker to prepare. I would be lost without this recipe!

We loved it! My kids thought it was a bit too spicy, but my husband and I thought it was perfect. I may have to tone it down a bit for my kids next time, but we will definitely be adding it to our rotation. Excellent!

Bean and Honey Burrito Casserole

Loved it! Even my very picky 7 year old who rarely likes anything that isn't pasta related and won't touch vegetables other than "crunchy" carrots inhaled 2 servings of it before telling me this goes on his list of favorites. Lots of flavor. The tortillas on the top turn out a little hard, but it doesn't take away from the wonderful flavor, so I still have to give it 5 stars. Will make again and again!

I really liked these, but I think I'll start cooking the carrots first and then add the vinegar and sugar half way into the cooking to avoid burning the sugar. Very good.
