Zucchini Chive Dip

Ooolala!! One of the best dips I've ever tasted! And so creamy! We ate it with Wheat Thins and couldn't stop! I broke down and bought fresh chives - very glad I did! Thanks for sharing this recipe!

Summer Zucchini Casserole

Mercy, this was soooo good!!! Someone had given me tons of zucchini, so I went a-searching for recipes! This one is a keeper! I did make a few changes as I didn't have carrots, so I added diced yellow pepper, mushrooms and green onions in place of the carrots. I sauteed my zucchini and onion in olive oil instead of boiling them. I only used about 3/4 can of cream of chicken and 3/4 cup sour cream. I also added some cheddar cheese to the mix. I did double the stuffing as suggested and was glad I did. My husband and I usually have some form of meat in our suppers, so this was a change. But he loved it and so did I! Bring on the zucchini!!

Sweet and Spicy Pumpkin Seeds

Wow!!! I have never been a big fan of pumpkin seeds, but this recipe has changed my mind forever! It caught my attention because my husband loves spicy things. This was also one of the easier recipes and it only takes 45 minutes! I think I am going to have to come up with more ways to use pumpkins because we will be having this again! By the way, I don't know what kind of hot sauce other people have been using, but we used my husband's "Z nothing beyond Extremely Hot Sauce" and 2 drops was just enough! Any more and I probly wouldn't be able to feel my lips! I also liked the suggestion to mix the sauce and then test taste it before adding the pumpkin seeds. Thanks for sharing this recipe!

Pumpkin Pancakes

This recipe is excellent!! Made it when we had a guest, and they were duly impressed! ;) I was looking for a recipe that didn't call for pancake mix so this was perfect! I did use freshly pureed pumpkin. And I took the Nutmeg Whipped Cream recipe from "rucifey" to top it all off. Boy was it good! We roasted the pumpkin seeds the evening before and used the Sweet and Spicy Pumpkin Seeds recipe from "lotus petal." Another hit! Thanks for sharing this recipe!
