Incredible Punch

Made this the first time over 5 years ago. I've made it for several parties and showers that I know it by heart. The BEST punch ever!! (Add a little Raspberry Rum for adult version.)

Baked Beans II

Cabbage Roll Casserole

This is so much easier than doing to "roll" thing. And I actually eat the cabbage this way! Taste yummy and the family loves it too. I used crushed tomatoes though and a little more rice.

Shrimp Scampi Bake

I've always made scampi in a saute pan and was a little leery about making it in the oven. DH was VERY skeptical but he LOVED it. He actually prefers this method over all the others I've made. I like my shrimp kind of "crusty" but I will use this recipe from now on; maybe "grill" the shrimp in a bit of olive oil on the stove first. (I did add 1/2 cup of white cooking wine and only used 1/2 the mustard.)

Slow Cooker Barbeque

This is the greatest find of the decade!! It's so easy and taste sooo much better than anything you can find 'eating out'. I add some other seasonings to really spice it up and use a really spice b-b-q sauce, but I love this recipe. I use a big roast (or 2 small ones) and freeze the extras.

King Ranch Chicken Casserole III

Great recipe! As others have stated, I've changed mine up a bit. I always use flour tortillas (ripped into pieces) which I would think absorbs better than corn tortillas. I use the broth from boiling the chicken pieces and then only about 1 cup. I omit the onions and bell peppers – that’s just too much work for this simple dish! I use Tony Chachere's seasoning instead of the ones mentioned. Although this recipe has always been a family favorite - I switched to the Extra Hot Rotel tomatoes a few years ago and being Cajuns in Texas – we really liked the extra hotness!
