Delmonico Potatoes

I tried this for the first time and it was really good. My husband said it was very much like "honeymoon potatoes" except that cottage cheese is used instead of half-and-half. I took another reviewers suggestion and used Potatoes O'Brien...this added a lot of flavor plus I sprinkled with garlic salt and pepper. I used Velveeta and a little shredded sharp cheddar. I defrosted the potatoes first so I thought the cooking time would be less, but after 1/2 hour at 350 it was still very soupy. Increased the temperature to 400 and took off the tin foil. Only then did it cook more quickly. and to the right consistency. Not sure why you do covered for so long....maybe it works better with frozen potatoes. Very good and will make it again.

Lemon Garlic Tilapia

This is absolutely so easy and delicious. I used fresh lemon squeezed on top with a sprinkling of garlic pepper. Cooked otherwise as directed....a can't miss recipe.

Light and Fluffy Spinach Quiche

This was my very first quiche so it took me a little longer to put it together. It turned out scrumptious. I only had regular mayonnaise so I used 1/4 cup and 1/4 cup of plain yogurt. I used 4 oz of cheddar cheese and 4 oz of 3-cheese Italian...very nice combination. I used fresh spinach, but didn't see any reports saying how much to use when using fresh so I used a whole bag of baby spinach. That was a little too much so the next time I will use about 3/4 bag and also chop the spinach. We have always bought quiche's from supermarket deli's, but will make my own from now on. My husband loved it and the only tiny issue was to chop the spinach next time. Lovely recipe.

Suzy's Mashed Red Potatoes

Made these potatoes for the first time on Thanksgiving. Very easy and delicious...needed something easy that day because the turkey sure wasn't. The only thing I did differently was to add a couple of garlic cloves while the potatoes were boiling.

Tender Italian Baked Chicken

I'm always looking for new chicken recipe's because my husband is a "where's the beef" guy. Read reviews and tried it last night. It was delicious. I used mayonnaise, but thinned it a little with fat free yogurt that I use for a quiche recipe. I had onion/garlic croutons so I crunched those into crumbs and added some Italian seasoning, dried parsley and garlic pepper. Only had 2 chicken breast halves so I cut the wet ingredients by more than half and it was plenty, just using a brush to coat. I baked it a little longer, but at 375 and turned it when I thought it was half done. Very juicy and tasty. Had been using French's Fried Onions crushed for coating, but this was even better. It's a keeper!

Sherry's German Turkey

I was so excited because it was just the 2 of us and I bought a tiny turkey of 11 lbs and thought sure I could handle it. My history with turkey has not been good, to say the least. But, with no company, I was sure it would be different. I followed the instructions with the vege's and fruit. I even found "soulfull" seasoning (which turned out to be very tasty). Everything was going great, turkey should have been done in 3 hours and the sides had been timed accordingly. Well, guess what? My poor history with turkey's continues. I cooked the turkey upside down! The result was that the breast wasn't done, or brown. Had to cook the turkey for another hour and that threw all the sides off. My husband was watching football and didn't help, so I blamed him and that made me feel a little better. However, the end result was a delicious turkey, and if I ever attempt another turkey (which is doubtful), I will definitely use this recipe.

Slow Cooker Pot Roast

I'm always looking for a way to spice up pot roast or beef stew without overdoing it. Instead of just using Italian Salad Dressing, I used Wishbone Robusto Italian. This has a real kick to it and was absolutely delicious. I didn't use the ranch dressing. Instead I used dry onion soup, brown gravy mix, Robusto Italian and some water. I don't measure, so I can't give numbers, just wing it. But, the Robusto made the difference.

Beef Stew VI

I thought this recipe was terrific, and agree that reviews should be based on the recipe as is, not altered. However, I made just a few minor changes. I browned the beef, then browned the onion, and carrots one after the other in the same skillet. Scraped the drippings, put in liquid beef stock and enough water, added the spices, heated to dissolve the drippings. Didn't brown the potatoes, but probably will next time. I used red potatoes, not peeled. The big difference was that I put everything in a crockpot and cooked it for about 4 hours. Delicious, tender meat, and great gravy. I added a little browning sauce to the gravy. My husband loved it. Rosemary is key!
