Elaine's Peanut Butter Cookies

This is a very quick and delicious recipe. Instead of flattening with a fork, I dropped teaspoons of the dough in mini muffin pans. I baked them at the same temp and time as the recipe said. When they came out of the oven, I immediately pushed an unwrapped peanut butter cup in the middle. Let cool before removing from the pan. DELICIOUS!!!

Lime Fluff

My sister-in-law made this for Thanksgiving dinner and EVERYONE loved it!! It was so good that I came to all recipes to find it so I can make it for dinner tonight. I plan to use wild strawberry jello. Will post results....

Apple Raisin French Toast Strata

This tastes wonderful! I made it for a baby shower and everyone loved it. It tastes real good with maple syrup, but it really has the taste and texture of a bread pudding. If you want a french toast texture, this is not it. But, don't let that stop you from making this, because it really is yummy.

Sausage Egg Casserole

This is so good and easy. I made this for an after-funeral reception and it almost completely disappeared! Everyone loved it! I will definately be making this alot in the future!!!

Fettuccine with Sweet Pepper-Cayenne Sauce

This was o-k. I added marinated artichoke hearts, but it still needed something. I didn't make it too hot. I'd rather have more flavor than just hot. Any sugestions? I'm willing to give it another shot.

Strawberry Romaine Salad I

I love this salad.The flavors are so good and it's so refreshing on a hot day. Don't add the dressing until right before you eat it. It gets a little soggy fast. But, make sure you try this. it's great. By the way, I used regular white vinegar and it was fine.

Fruity Grilled Pork Tenderloin

This was...interesting. I really liked it. My husband and teenage son thought it was so-so. My adult daughter and her friend liked it. The pork was VERY tender. I will probably make it again, but it's not something I'm dying to make again.

Chicken Jerusalem I

I made this using 1 cup of wine instead of 1 1/4 and it still tasted a little too strong. I had eight "taste testers", ages 18 to 42, rate this chicken and on a scale of 1-10 they gave it a 5. It was nothing special and as one taster said," it tastes like something a caterer would make in bulk". Will not be making this again.

Guadalupe River Bottom Puddin' Cake

This was only so-so. Nothing really special. Taste like pudding on a crust with whipped cream. I'd rather spend my calories on something more tasty.Probably won't make again.

Chicken Tortilla Soup I

This is the easiest chicken tortilla soup recipe I've made.This soup is so good and filling! I did make a few changes to suit our tastes. I left out the oregano and hominy, as these are two things I do not like. I also used Chinese hot chili oil instead of the chili powder,and added 1/2 a can of hot tomato sauce. It's called El Pato and comes in a yellow can with a picture of a duck on it. All grocery stores carry it in the aisle with the regular tomato sauces. Go easy, it has a kick to it! I also used the broth the chicken made when I boiled the chicken instead of canned broth. I highly recommend this recipe!!!!!

Crab Quiche I

I changed this recipe a little after reading some of the reviews. I used 2-6oz.cans of crab, omitted the green onions and used Jalapeno jack cheese. I also added 1 Tbsp of chili oil. This was so good. I made this for a birthday luncheon and everyone loved it. This is definately a keeper.

Best Ever Muffins

I had to make 225 muffins for our church Easter Brunch and this recipe was great!!!I scaled it to 36 servings and made it with five different additions. One with MILK chocolate chips, another with raspberries and struesel topping,blueberry and pineapple with coconut extract. I made a glaze with pineapple juice and topped it with a little coconut. they tasted like little pina colada muffins. Everybody loved them!!

Lemon Poppy Seed Muffins II
