Boudreaux's Zydeco Stomp Gumbo

DELICIOUS! To make it even tastier, add the vegetables in right after you finish the roux. Also, add 2 cups of chicken instead of just 1, and 1 pound of sausage links instead of 1/2 pound. Otherwise, cut down the broth to about 2 quarts instead of 3. Very yummy!

Banana Crumb Muffins

SINFULLY DELICIOUS! Couldn't be better! My husband is in the Navy, so I made a batch and sent them to work with him. They were gone in minutes, and I have since made 2 more batches upon request! My only suggestion would be to enjoy them and substitute out the bananas for other fruits to see just how many different types of yummy muffins you could make! PERFECT RECIPE! Don't change a thing!

Twice Baked Potatoes

DELICIOUS! I cut down the red pepper to 1/2 tsp. and also the garlic powder to 1/2 tsp. Otherwise, they were perfect! We served them at a party we hosted, and they were a huge hit and were devoured almost instantly!

Breaded Turkey Breasts

I used SOOUTHPHILLY's recommendation and dipped the chicken breast in flour, then in the milk, which I added an egg to, and then in the bread crumbs. It was absolutely delicious! It went nicely with the "Pasta with Sweet Peas" recipe found on this website!

Stuffed and Wrapped Chicken Breast

Sinfully delicious! I used suggestions from some of the reviews and cut down the green onions to 2 and eliminated the salt & pepper all together. I also added 1 chopped jalapeno, 1/4 cup chopped green bell pepper, & 4 pieces of bacon, & 2 chicken breasts, which increased the servings to 6. Before wrapping each piece of chicken with 2 pieces of bacon, I added Montreal chicken seasoning to the chicken. For sides, I made baked potatoes and broccoli & cheese. It was SCRUMPTIOUS!

Parmesan Sage Pork Chops

Absolutely delicious! Wouldn't change a thing! I didn't have enough bread crumbs, so I crunched up Ritz whole wheat crackers to add to them. Yummy!

Pasta with Sweet Peas

Very good, except cut down the red pepper flakes to about 1/4-1/2 teaspoon! My mouth was on fire! Luckily, I paired it with the Breaded Turkey Breasts, so it toned down the heat a little. Other than that, DELICIOUS!

One Skillet Pork Supper

Fast, easy, and yummy! I had pork stew meat thawed, so I used that instead of pork chops. I added 3 small stalks of celery. I diced the celery, carrots, & potatoes into 1-2 inch chunks. I also had no tomato soup, so I used a can of tomato sauce instead. I served it in a bowl with fresh French bread on the side, and it came out delicious!

Angela's Easy Breaded Chicken

My mom used to make this for me all the time when I was younger without the breading! The only thing I would change about this recipe would be to marinate the chicken in the Italian dressing overnight like my mom used to, so the flavors of the Italian dressing really stick to the chicken! Delicious, fast, & easy!

Creamy Spinach Tortellini

Delicious! My suggestion is to cut down the spinach to about 7 ounces (3/4 of the 10 oz. bag), add another 1/2 cup of milk, and another 2 TBSP of butter, and use a large onion. It made it much creamier and saucier and less pasty, and blended the flavors better without the overpowering of the spinach. Quick, easy, Great recipe!

Stuffed Eggplant Parmesan

Very yummy! I only had 1 eggplant, so I added 1/4 cup red bell pepper, 1/4 cup green bell pepper, and 1 diced tomato, which was a delicious addition! I also opened the casing to turkey sausage, browned it, and added it to the stuffing, but would not recommend adding any meat, or else it will compete with the other flavors. I didn't have tomato sauce or mozzarella cheese, so I used spaghetti sauce & cheddar cheese, which I also don't recommend. I would cut down on the Parmesan cheese a bit and make sure to use freshly grated, rather than packaged. I had to add 10 minutes to the cooking time, which probably varies depending on the oven & elevation. All the produce I used was locally grown, which made this meal extra yummy! Fairly quick and very easy!

Healthy Turkey Loaf

This meal was mediocre. Not because it wasn't a great idea or because it's a bad recipe, but because ground turkey just isn't a good substitute for ground beef in regards to a meat loaf. It tasted okay when warm, but don't dare take a bite once it's gone cold, or it will taste like cat food. I bet this recipe would be outstanding if lean ground beef were used instead of ground turkey! I've been trying to find good ground turkey recipes but just haven't had much luck.

Cream Cheese Sugar Cookies

The cookies were mediocre. The dough was too stiff to roll after the 8 hours of refrigerating, so I let it sit out for about half an hour or so. Then, the dough kept sticking to the rolling pin & tearing, despite how much flour I used to avoid it. The cookies started to burn after about 5 minutes, so for the next batch, I adjusted the temp to 350. This helped, but in the end, once I finally got a decent batch, they were mediocre. I love cream cheese, but maybe I'm just not a fan of sugar cookies. I was hoping by the picture that an icing recipe was included, but since it wasn't, I made my own cream cheese/powdered sugar/vanilla/butter icing. It definitely helped.

Turkey Jambalaya

Rice DID NOT cook as recipe indicated. I ended up using another can of chicken broth and about another 45 minutes and STILL it wasn't all the way cooked. We were so hungry, we just gave up and ate it, and the chicken broth dominated the entire dish. I'm sure it would've been delicious had I cooked the rice separately.
