Cream Cheese Sugar Cookies
The cookies were mediocre. The dough was too stiff to roll after the 8 hours of refrigerating, so I let it sit out for about half an hour or so. Then, the dough kept sticking to the rolling pin & tearing, despite how much flour I used to avoid it. The cookies started to burn after about 5 minutes, so for the next batch, I adjusted the temp to 350. This helped, but in the end, once I finally got a decent batch, they were mediocre. I love cream cheese, but maybe I'm just not a fan of sugar cookies. I was hoping by the picture that an icing recipe was included, but since it wasn't, I made my own cream cheese/powdered sugar/vanilla/butter icing. It definitely helped.

Turkey Jambalaya
Rice DID NOT cook as recipe indicated. I ended up using another can of chicken broth and about another 45 minutes and STILL it wasn't all the way cooked. We were so hungry, we just gave up and ate it, and the chicken broth dominated the entire dish. I'm sure it would've been delicious had I cooked the rice separately.

Stuffed Eggplant Parmesan
Very yummy! I only had 1 eggplant, so I added 1/4 cup red bell pepper, 1/4 cup green bell pepper, and 1 diced tomato, which was a delicious addition! I also opened the casing to turkey sausage, browned it, and added it to the stuffing, but would not recommend adding any meat, or else it will compete with the other flavors. I didn't have tomato sauce or mozzarella cheese, so I used spaghetti sauce & cheddar cheese, which I also don't recommend. I would cut down on the Parmesan cheese a bit and make sure to use freshly grated, rather than packaged. I had to add 10 minutes to the cooking time, which probably varies depending on the oven & elevation. All the produce I used was locally grown, which made this meal extra yummy! Fairly quick and very easy!
