Dip For The Stars

I made this for the first time for a couple shower I hosted for 40 people. I was nervous since I had never made it before but it turned out awesome and many people raved about it!! Here is what I did a little differently - used a 9" spring form pan - used vodka instead of vermouth - used store bought sun dried tomato spread - used 3 garlic cloves (this was too many, will use 1 - 2 next time) - used 1/4 to 1/2 c more pesto, sun dried tomatoes than called for served with water crackers and small toasted slice baquettes.

Lebanese-Style Red Lentil Soup

Great recipe. I made some modifications: I doubled the recipe. Sauteed some diced carrots with the onion/garlic. Reduced the lemon juice and added extra cumin/cilantro as these are my two favorites. Will be making this again.

Strawberries with Balsamic Vinegar

No-Noodle Zucchini Lasagna

Received rave reviews at a dinner party. As many warned, it was very watery and I had to drain the lasagna pan several times while cooking. I had salted zucchini before hand and it didn't seem to get ride of water. It was also a lot of work to slice the zucchini - I used a mandoline.

Avocado Feta Salsa

This was awesome! Made it for a party and it was gone. This one is going in my list of regular recipes. Changes made: Used three avocados and 3 tomatoes, fresh cilantro instead of parsley/oregano. Reserved a small amount of tomato, feta and cilantro and sprinkled on top of dip to make it look nicer. Served with tortilla chips.

Crustless Spinach Quiche

Awesome! Made this for my family for Christmas morning breakfast and it was a huge hit! I did as many suggested - used olive oil instead of vegetable; sauteed garlic, red pepper along with the onions; used sharp cheddar instead of muenster; added chopped tomatoes and cooked bacon to the mix; added sliced tomatoes to top of quiche for color; This is a very healthy dish and I will make it again, not just for special occasions.

Marinated Grilled Shrimp

Awesome!!! A hit at our party last night. It tasted as good as a shrimp dish at a nice restaurant. I did not change anything in the recipe, except I portioned it up for 5 lbs of shrimp. We bought the largest shrimp available at a local seafood market and they came out the perfect size once cooked. I can't wait to make this again, I am actually craving some of the shrimp now!

Sangria! Sangria!

Awesome! Made this last night for a cookout at our house and it was a hit - not a drop left! I doubled the recipe and omitted the sugar. I had cans of sprite zero sitting next to the pitcher sangria for guests to add if they desired. Without the sprite it was very strong . I added sprite to mine and it was perfect.

Black Bean Soft Tacos

Excellent. Omitted oregano, cheese and avocado. Added chopped cilantro and sour cream. Used can of diced tomatoes and chiles, instead of separate cans for each. Will be making this again.

Oven-Roasted Sweet Potato Fries

The fries would not get crisp, so I cooked about 10 - 15 minutes than the recipe called for. I got sidetracked and came back to find a portion of my fries burnt, and unfortunately, many of them were still not crisp. I was so surprised, the fries actually tasted awesome! They were sweet and the black parts that were burnt actually didn't taste too bad. I am going to try this recipe again, but I need to figure out a way to make the fries crispier- maybe I used too much oil?

Baked Ziti I

I got this recipe from here over two years ago and it is a mainstay in my recipe box. I pretty much make the recipe exactly as is. I am trying to eat healthier so I use ground turkey instead of beef and use whole wheat pasta. Be careful when cooking, it makes a lot of food and it is almost always near overflowing out of the pan.
