Fiesta Grilled Chicken

Fabulous! The salsa seemed like lots until we all dished up! It was devoured by 3 teenage boys, my husband and me. You could double (or more) the lettuce...I chopped it up first so it was easier to eat. The marinade is enough for more chicken than listed. I sliced the chicken breasts in half to shorten the grilling time. Wish I'd marinated and cooked more for leftovers. Followed recipe for the most part (mixed spices with lime juice...didn't have tequila (or any other alcohol), but added a tequila lime dry marinade from Cabelas that I had in the cupboard to the lime juice and spices and only marinaded for about 20 minutes since the chicken was so thin) Also, I didn't have Italian dressing, so I just sprinkled in about 1 tsp. Italian seasoning and 1-2 TBSP each of vinegar and oil in the salsa (you could use more if you like Italian dressing). I made the salsa about 1/2 hour before dinner and it worked great. I don't know that waiting 6 hours is necessary. I did stir it every few minutes while it sat in the fridge. Will definitely make this again!

Lime Bars

Great recipe. Tripled the lime zest and doubled the juice in the bar and doubled the zest and juice in the icing for the extra zip. They were definitely zingy. Everyone loved them and they were completely gobbled up. I used a 9x13 pan for the recipe with no changes except those I've listed (and cooked a little longer).

Wild Rice and Pepper Salad

I was pleasantly surprised! It's a light, fresh meal. I doubled the lemon because I'm a fan. My whole family ate it. Great side or potluck dish because it can be made ahead.

Jumbo Dark Chocolate Cookies

Delicious! Made a double batch and they were gobbled up quickly! Make sure not to overcook the chocolate in the microwave. I almost burned mine. Melting chocolate in double boiler might be a better solution.

Sweet Sticky Rice with Mangoes

FABULOUS! Didn't change anything (except I had to add more water 3x during rice cooking phase). I've never made rice in the microwave...always in the rice cooker, so this was a fun recipe! And YUMMY!!! It was more than enough for 6 people.

This was fantastic! Mild curry flavor that is balanced perfectly with the nuts and raisins. I used regular raisins since I didn't have golden raisins. Family loved it!

Buttermilk Syrup

DO NOT BOIL THIS TOO LONG!!! Or you will have caramels or hard candy! Also, be aware that if you have leftovers and warm this up in the microwave oven, it will get thicker and darker each time. (It was the thickness of ice cream carmel topping by the time we finished it all off). FANTASTIC TASTE!! (oh, I should say that I used curdled half and half to make a bunch of "buttermilk" recipes on this site! I just blended it really well before starting any of the recipes so it wouldn't have clumps). SO EASY TO MAKE! OH, Also...don't use a small pan...this will DOUBLE or MORE in size while boiling, so pick a LARGE saucepan unless you like cleaning your stove from boil-overs.

Super-Delicious Zuppa Toscana

Just like O.G. soup! My family loved it! I accidentally put in double the red pepper flakes (Don't do that!!!) so it was a little off, but I could tell that was the reason. I chopped the spinach into smaller pieces for ease of eating and cooked up an entire package of bacon (and drained it). It was perfect with homemade bread and salad.

Marinated Vegetable Salad

Excellent Recipe. I'm not a fan of raw onions, but with the dressing, it was great! Because I have diabetics in the house, I substituted half of the sugar for sweetener. If you aren't a vinegar fan, it would be good with only 1/2 the dressing, too.

Simmered Cranberry Pork Chops

I had fresh cranberries that I never made into sauce during the holidays, so this recipe was perfect! I sliced a boneless pork roast into 8 "chops" and browned. Doubled sauce ingredients. Used 1/2 Splenda and 1/2 white sugar. Added zest and juice of one large orange just because I love orange with my cranberry. I'm sure it would have been great without it too. Covered chops with water. Thirty minutes later, we had wonderful pork chops with a sweet cranberry sauce (used two bags of fresh cranberries because the sauce is what makes it so fabulous!). The extra sauce went well with the wild rice mix. Great recipe. Thanks for sharing!

Whole Wheat and Honey Pizza Dough

Great taste! I don't know if it was the whole wheat that was just too heavy, or if it was my yeast, but it did not "poof" up very much in the rising or baking, nor did it become crisp anywhere. Very soft crust. I think 350 is too low to bake pizza. That may have also contributed. I like to cook my pizzas on at least 400 (which I should have done this time, but wanted to follow the recipe). I also baked the crust for 5 minutes before adding sauce and toppings and finishing baking. I might revise this to 5 stars if I make it again with different yeast and have a better outcome!

Real Hummus

Definitely follow recipe with updated amounts by author. I made a "tripled" batch for a family event. It was a great hit. I made my tahini from scratch (pan toasted sesame seeds blended with olive oil and a little sesame oil), so I added even more. Made it again the other day and realized I was out of garbanzo beans, so I made it with white beans. My husband says he is not a fan of hummus, but ended up eating 1/2 of a doubled recipe! Thanks for the great recipe ROYHOBBS!!

Easy Mint Chocolate Chip Ice Cream

Pretty good. My family raved about it. It whipped up very light and fluffy in the ice cream maker. Stirred in crushed Oreo cookies instead of chocolate chips when transferring it from the ice cream maker to the container. Will make again. Thanks for the recipe.

Poppy Seed Dressing III

Yummy dressing and at a fraction of the cost of the bottled stuff. So easy to make! Thanks for the great recipe, paralee!! I substituted Splenda for the sugar (two diabetics in the house)and rice vinegar for the wine vinegar and served it with a spinach and strawberry salad.
