Soft Gingersnaps

These were wonderful! I made them exactly as instructed and they came out really well. The only recommendation I would make is to make sure the molasses is well mixed into the other ingredients. I had a few where the molasses had clumped a little and spilled out of the cookie, which then burned to the cookie sheet. But it only happened to two out of the 3 dozen...not bad. I used my electric mixer, which made this a super easy recipe. The dough was really easy to work with, and the final result was deliciously spiced for a Christmas cookie!

Snickerdoodles I

Just finished making these and they are delicious. So soft and sweet. Agreed that 8-10 minutes might be a bit too long to bake. I did the first dozen for about 6 and a half minutes, and they were a tiny bit doughy. The second batch I did for 8 and a half minutes and they were a little crispier than I wanted (I was aiming for that soft middle). The third batch I did for about 7:45, and they came out juuuuuust right. Goldilocks would be pleased with them. I would assume that it has a lot to do with altitude, but if you're in NYC 7:45 is the golden baking time. Thanks for a great recipe!

Rich and Creamy Beef Stroganoff

OMG this was amazing. So creamy and hearty. We followed other reviewers' advice and cut back on the crushed red pepper - we gave the skillet two good shakes from the dispenser, and it turned out just right. We also substituted dijon mustard for the prepared mustard. Followed the rest of the recipe just as written, using a cast iron skillet. Just be sure to watch it while it's simmering - ours started to burn to the bottom of the skillet. We served it over egg noodles and topped with breadcrumbs, with a little of the Pinot Noir we used for the marinade. SO good.

The Breakfast Omwich

This made my fiancé very happy. It's a great breakfast for using up the bits and pieces left over in the fridge after cooking dinners. We used ham, bacon, green onions, mushrooms, and cheese. I sautéed the mushrooms in a little bit of olive oil with a dash of garlic salt before adding them in, and it was delicious. Highly recommended, and easy to make!

Ultimate Twice Baked Potatoes

This was delicious!! I followed the advice of other reviewers and made sure to leave about 1/4 inch of potato around the skins while hollowing out. It made it really easy to scoop everything out and left the skins ready for the filling later. So tasty!!

Really great recipe! As other reviewers have said, you don't really need to let them sit for an hour in order for them to taste good. I left them sitting for about 5 minutes and they were delicious! I also added an extra teaspoon of sugar. So good!

Best Ever Pasta Salad

Made this one for a picnic with my boyfriend. We went with other reviewers' recommendations of cutting back on the mayo, sour cream and dill - we cut the amounts almost in half - but I still found it to be way too much dressing for the amount of pasta. I'm not a big fan of mayonnaise though, so that might've been part of the problem. My boyfriend enjoyed it much more, but did mention that the dill was a little overwhelming. Recommendations: cut back on the mayo and sour cream and dill - use half of what the recipe calls for or less. Also, making it a day ahead of time might help the flavors work together better - I definitely enjoyed it more the second day.

Laura's Lemon Roasted Potatoes

This has become one of my go-to side dishes for meals. I do recommend adding more lemon (I like the lemon flavor, so I double the amount called for here). I also recommend letting the potatoes brown on one side, and then stirring them up to let the other sides brown evenly. It took mine a little more than 45 minutes to cook entirely through. I've tried it with both skins on the potatoes and with peeled potatoes, and personally prefer it with the skins on. It gives more of a crispy texture. But both ways were tasty!

Sweet 'n' Tangy Pork Chops

I definitely recommend doubling the sauce, but otherwise, this was really tasty. I slightly undercooked the pork chops and had to put them back on the stove for a bit, and they were still a little tough. That may have just been the cut I got though. Overall it was really good and the sauce was delicious!!

Salsa Chicken and Potato Packets

I followed some other reviewers' advice and seasoned the chicken before putting it in the packet, and I feel like it made a big difference. I used GwenLea's marinade of Italian dressing, chili powder, garlic powder, and pepper and added a little Mrs. Dash. I would also recommend slicing the potatoes quite thin - some of my thicker slices weren't cooked all the way through, but the thinner ones were perfect. Topped with a little shredded cheese and sour cream, and it was amazing!

Parmesan Asparagus

I've made this one twice now and am in love with how easy it is. I followed some other reviewers' advice and put everything into a plastic bag to mix it up and then dumped it onto a baking sheet. I baked it about 4-5 minutes on each side, and then sprinkled some extra parmesan on top while it was still warm. Delicious!

Lemon Garlic Tilapia

This was delicious! I live alone and wanted something easy, healthy and quick for dinner. This ended up being the perfect choice! I did change the recipe a bit - using the suggestions from other reviewers: First, I used 1 tbsp of olive oil instead of the butter, and sautéed it with the lemon juice, garlic and parsley for about 30 seconds before pouring it over the fish. I cooked the fish in a foil packet at 400 for about 10 minutes, and it came out perfectly - I would definitely not cook it for any longer than that. I served it over rice with a side of veggies, and the lemon/garlic sauce was delicious with the rice. A healthy and filling meal that took about 20 mins total to make. I'll be doing this again!

Easy Tortellini Bake

This recipe was VERY easy to make and really filling. I made the full 6 servings, but was only serving two. I was able to refrigerate the leftovers and took them to work for lunches, and it tasted just as good days later. The cheesy sauce is really rich and heavy, so maybe reduce the amount of cheese you use if you're looking for something a little lighter.

Poached Salmon

My boyfriend and I LOVED this dish. We followed the recipe exactly and couldn't have been happier with how it turned out. We paired it with some mixed veggies and it was delicious. It's really light - a perfect summertime meal.
