This was delicious! I live alone and wanted something easy, healthy and quick for dinner. This ended up being the perfect choice! I did change the recipe a bit - using the suggestions from other reviewers:
First, I used 1 tbsp of olive oil instead of the butter, and sautéed it with the lemon juice, garlic and parsley for about 30 seconds before pouring it over the fish. I cooked the fish in a foil packet at 400 for about 10 minutes, and it came out perfectly - I would definitely not cook it for any longer than that. I served it over rice with a side of veggies, and the lemon/garlic sauce was delicious with the rice. A healthy and filling meal that took about 20 mins total to make. I'll be doing this again!
