Janet's Rich Banana Bread

Reviewed: Sep. 14, 2011
I love this recipe! The bread is so moist and tastes delish! I follow it exactly with the exception of this weekend. I only had one banana and made it with that banana mashed up and added a small container (one of the lunch box size) of apple sauce, mixed it with the super mashed bananas and added that to the mix. Came out excellent! So even if you just have one banana it can work!

Featherlight Scones

Reviewed: Aug. 7, 2011
I was not expecting such a soft scone, but it is good. More like a biscuit. I will next time add at least 1/2 cup of sugar, and maybe make a glaze. I was expecting a somewhat sweeter scone than what came out. Just know this is not sweet at all. I'm used to scones bought in coffee shops. This wasn't like that.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 27, 2009
So delicious! My family loved it! I did however omit the liver, and added fresh garlic, and shallots very thinkly chopped to the sausage mix. I also used hot sausage which surprisingly was not hot at all. As others stated, having fresh herbs is key. I also put it in a casserole dish for 40 minutes at 350. I doubled the stock but added it between cooking time and stirred while baking in the oven. I will be definately making this again!

Spanish Flan

Reviewed: Nov. 8, 2009
I'm Puerto Rican and creamy flan is a staple of my island. Flan should not jiggle and cause the person to chase after it on a plate...lol. This recipe is exactly how I make it. Delicious. THe more eggs you put the more holes and less creamy, thus 3 eggs is perfect. IF you want to make it a Flan de queso (CHeese flan) just add a 4 oz package of cream cheese to the mix, it will make a nice slight creamy cheese taste without compromising the soft creaminess of this flan.

Creamy Au Gratin Potatoes

Reviewed: Jul. 27, 2009
Awesome! I sliced the potatoes in a "scallop" style and used red potatoes. I also added more flour to the mixture (about a teaspoon more) and also added salt and pepper to the mix. Also adding salt and paper between the layers is important. Lastly, the last 10 minutes in the oven I took the foil off and sprinkled some plain bread crumbs on top to give it a nice crust on top. It was so yummy, my husband who usually doesn't like this style of potatoes raved about it all night.

Margie's Cuban Sofrito (Sauce)

Reviewed: Jul. 20, 2009
Maybe the people reviewing are not Puerto Rican or Cuban because this is NOT sofrito! I tried it, was wondering about the ingredients, but I'm tired of using Goya frozen sofrito. Anyhow, this reminds me of a pico de gallo salsa mixture. Definately NOT an authentic sofrito :(

Quick and Easy Brownies

Reviewed: Jul. 20, 2009
I don't know what happened, followed the recipe to a "T" and what came out was just not what I think a brownie should be. Very cakey, not enough chocolate...I will continue my search for the perfect brownie :(

Grilled Salmon I

Amazingly delicious! I did however let the salmon sit with the lemon pepper and garlic powder, salt for an hour before putting it into the liquid mix. It's best grilled IMO

Balsamic Roasted Red Potatoes

Reviewed: Jul. 17, 2009
Delicious!! Only thing different I did was add garlic powder, sea salt, and pepper to the potatoes while in the skillet rather than at the end. Also I substituted a shallot in place of the garlic and onion and it worked great!!

Banana Muffins II

Reviewed: Jun. 30, 2009
Super moist!I added about a teaspoon of cinnamon, some vanilla extract (capful) and a bit of brandy! They came out delicious! I have to say I followed the advice of not overmixing and fold the mixture in. Delicious and will be making again for sure.

Original Nestle® Toll House® Chocolate Chip Cookies

Reviewed: May 3, 2005
This has been the recipe my family has used since I was little, however when it came time for me to make them they always came out flat. By suggestion of my sister in law what I did was used Baking Poweder instead of Baking soda, split the butter with 1/2 crisco butter and 1/2 sweet unsalted butter, doubled the vanilla, and used just 1/4 cup of white sugar and made the rest light brown sugar. I also beat the butters and sugars with my electric beater and slowly added the eggs. Oh and last but not least a packet of instant vanilla pudding just before I added the chips. End result, awesome cookies that were so thick I had to pre-flatten them before going in the oven!! Really thick and chewy.... P.S. I decreased the amount of sugar because with the instant pudding if you don't decrease the sugar it will be a little too sweet.

Came out nice and moist, however since I am lazy I'll just buy it at a bakery, but I must correct this is not a Mexican cake, Tres Leches is Nicaraguan =)

Cream Cheese Flan

Recipe is great...but for an even creamier consistancy..reduce eggs to 3...and reduce cream cheese...results...wonderfully creamy, not jiggly flan
