Ok, so I am admittedly guilty of altering the recipe too. But I'm still rating it 5 stars because even if you make some substitutions, it is just a great base pumpkin bread. I made it last year and now here I am looking it up again. Going with others suggestions I replaced 1/2 the oil with apple sauce and cut the sugar. Can't remember if I used 1/2 c. or 1 c. applesauce, 2 C. sugar, and 1/2 c. oil. No other alterations other than self-rising flour instead of all-purpose. My mother in law had asked for me to make her pumpkin bread for Christmas and this recipe was a huge hit. I will be making again very soon. Flavorful and mouthwatering moist.
