Mom's Best Pork Chops

Best pork chop recipe I've tried! Only needed to bake 20 mins. I also only used 1 pkg. of the saltines-it was plenty of coating.

Made a few minor changes and it turned out perfect! Doubled the recipe but used only 2 c. sugar so cut back on sugar over all. Mixed a little bit of the cocoa/sugar mixture into the eggs before adding them into the bowl. Also used heaping tablespoons of the cocoa per other reviewers' suggestions.

Gourmet Sweet Potato Souffle

Amazingly delicious! Omitted the cloves. I'm wondering if I used more sweet potatoes than called for because this would not fit in my food processor. Might try cutting back a little on the sugar next time per other reviewers' suggestions.

Goat Cheese and Arugula over Penne

Very yummy! Agree with some other reviewers that it's slightly bland. Will double the amount of arugula & tomatoes next time which may help with that. May also try adding some lemon juice next time per other reviewers. Sauteed garlic and arugula in the olive oil before adding it to cheese- good idea.

Hearty Vegetable Lasagna

Delicious- made a few changes due to reading the reviews. I used shredded zucchini and carrots instead of the green pepper and used 3/4 lb. mushrooms. I ended up using half as many lasagna noodles as the recipe calls for. Olive oil instead of vegetable oil. Used 1 and 1/2 jars of pasta sauce.
