Banana Banana Bread

My 12 yr old son and I put this recipe to the "test". We went to work in the kitchen; he followed the recipe I've used in the past ten years, and I followed this new one. I did add 1 tsp of vanilla and 1/2 tsp cinnamon. Two loaves later, our entire family chose to retire the old recipe; this recipe was voted the best tasting, with great banana flavor, very moist and just plain yummy! It won hands down!

Frosted Banana Bars

I doubled the recipe and made 2 9x13 pans. I frosted one to take to work and left the other one un-frosted. My 12 yr old son started devouring the unfrosted bars and exclaimed "This is better than your banana bread mom!" Excellent hit at work also!! I didn't have cream cheese frosting, but had a container of vanilla frosting and it was just as yummy!! I saved the recipe and plan to work with it to make muffins and bread....it was SO moist and had excellent flavor (I did add a couple extra bananas).

Basic Bean Soup

I tweaked this recipe a bit and my family loved it! I used a 15 bean mix (soaked overnight and drained); added some bacon along with the ham, add decreased the water by a few cups. I also used chicken broth and some left-over gravy in place of some of the water.

Champagne Shrimp and Pasta

Was very easy and my family loved it. Even my 9 yr old son didn't complain about having left-overs the next night. I didn't want to use champagne as called for....substitued white grape juice and the flavor was marvelous.

Cabbage Fat-Burning Soup

This was an excellent recipe for our family. It made quite a bit, which left plenty to freeze for another 2 meals. I used V8 juice for my tomato juice and cut back a bit on the water. The remainder thawed easily from the freezer and I added meatballs to the soup which my husband and 9yr old son loved!

Cream of Chicken Breasts

This was an excellent and EASY meal for our family. I did a bit of tweaking however....because my husband had a hearty appetite and my 9 yr old son is going through a huge growth spurt, I knew that 4 breasts would not be enough for our family. I used 8 chicken breasts instead of 4....then 2 cans of cream of chicken, and 1 can cream of celery (mushroom would've worked too). I doubled everything else and baked a little bit longer. I also made rice and it worked nicely atop that. My son loved it!!!

French Toast Casserole

Was a little too "moist" for my son and hubby (even though I had used extra bread than called for)...I on the other hand enjoyed it. My hubby and son thought it had more of a "bread pudding" taste and texture.

Bacon Wrapped Duck Breasts

This was ok...I didn't soak or marinate as long as recommended, and didn't really like the Italian flavor the dressing added to the duck. I did double up on the bacon though (hoping to try and get this meat past my 9 yr old son). The bacon does help, but as mentioned in a previous review, when cooking in the oven you might want to turn meat over after bacon crisps to allow the bacon on the underside to crisp also. In the end it wasn't anything I'll probably make again. Think next time I cook duck, I'll go with a little bit more "traditional" of a recipe for duck.

Better Than Sex Cake II

I've made this cake before, but this recipe is better. The candy on the top really makes the difference. I've made it several times now and always get rave reviews! Plus the name lends itself to some pretty interesting conversations!

Recipe didn't work for me...I'm going to try again though and use more sugar. I don't think there was quite enough to "super-saturate" the water. I'll use more sugar and heat it longer than I did the first time.

Herbed Turkey Breast

Excellent and VERY moist! My 9 yr old even asked for seconds! I cut back a bit on the lemon and added a bit more of the herbs and garlic....I will definately use this recipe again...am going to try it using a whole turkey also.

Creamy Pear Pie

Was an excellent way to use up the ripe pears I had on hand. I did make extra of the crumb topping for the pie...and had to cook it a bit longer as the pears that weren't as ripe took longer to soften.
