Sloppy Joes II

When I read all of the rave reviews I was skeptical. After all, how GREAT can Sloppy Joes really be? WELL, I followed the recipe EXACTLY and to my surprise I found it to be absolutely delicious, easy to prepare and almost addictive. Anytime we need a fast and tasty meal in the future, or 'football food' this will be my go to recipe. It is especially good with sweet cabbage slaw topping!! Yum!!

Classic Irish Boiled Dinner

Fantastic!! What a rush of childhood memories of my grandmother's kitchen. The ONLY substitution I made was to use a Cottage Ham - a 'partially cooked' pork shoulder. To be totally true to my family version, the cottage ham or pork shoulder should contain gobs of fat. The fat adds so much flavor.

Sweet Russian Cabbage Soup

Fantastic!! I changed nothing and was pleased to find the final dish tasted EXACTLY like the Cabbage soup from Izzy's, a local Jewish Deli. I can think of NOTHING that could possibly improve this recipe.

Colcannon

As suggested by others, I used Nutmeg instead of the mace and Kale instead of cabbage. Trust me.... the end result was exactly as I remember my now departed grandmother's colcannon. Our relatives from Mitchelstown,County Cork, Ireland would be proud of such a faithful rendition of an Irish classic.
