Exquisite Pizza Sauce

Added half of the anchovy paste as I have never had it. Then cut down the cayenne pepper and no red pepper flakes as a member of my family does not like spicy foods. It turned out perfect and was still a little spicy. Its a keeper for sure.

Lemon-Orange Orange Roughy

I cant believe how good this was. There was this awesome juice left on the pan after baking it and we added that to my already seasoned rice. Nothing left afterwards. So good. Oh and I baked it instead and added two tablespoons of butter to the sauce before baking because everything is better with butter.

Greek Style Potatoes

Boiled Potatoes in Chicken broth till almost done, well suppose to be. In small bowl made a mixture of Olive Oil, 2 cloves garlic, 1/2 squeezed Lemon, fresh Oregano, fresh Rosemary, salt, pepper. Mixed that up & tossed over potatoes on baking sheet. Tried to cook to make crunchy as I had boiled them to the point of mashing them. After 10 min.'s in oven at 400, I took them out & mashed it all up with a little butter & milk. Turned into tasty Greek Mashed Potatoes. Served with Greek Feta Chicken.

Chicken With Mushrooms

Super good! I added a few adjustments. It will be a recipe for company. Nothing was mushy like I thought it would be. Add fresh garlic & little bit of Rosemary to the Mushrooms. Add Rosemary also to Italian Bread Crumbs. Add 1 can of condensed Mushroom soup to 1 cup Chicken Broth. After adding half of Mushrooms to the bottom of the pan, place browned breaded Chicken on top those and pour on the sauce. Sprinkle the other 1/2 of Mushrooms on top. Bake that first and then 10 min. before it is finished baking, add the Cheese. I also used a bag of shredded Italian Cheeses.

Tequila Cocktail Sauce

This is really good but this makes a TON, enough for a wedding! I cut it in half and still that was too much. Also gradually add the hot sauce and taste as you go along as it was a little too spicy and we like spicy. Maybe that all depends on the brand of hot sauce you use. I used "Franks" hot sauce. Otherwise delish! Oh and you cannot taste the Tequila at all.

Tilapia Scaloppine

Very good. I altered it a little bit. I cut back on the lemon. It needed more sauce so next time, I will double the wine and add 1 or 2 Tablespoons of the pasta water to help thicken it slightly. I also followed another suggestion on here that I think made it better. I sauteed the seasoned fish in the oil/butter and garlic and then let it cook the rest of the way in the oven. Like the other review, I wanted it to not be soggy and wanted to be able to stir the mushroom and wine better. I did put the fish back on the sauce for about two minutes at the end after I added the Lemon to help it soak up the flavor.
