Hummus III

Reviewed: Aug. 27, 2011
Very good hummus. I add the olive oil while blending it in the food processor for a nice creamy texture. I also add a little of the bean water from the can for a smoother consistency, otherwise it's too stiff.

Creamy Au Gratin Potatoes

Reviewed: Jan. 11, 2011
Excellent! I doubled the recipe and layered the potatoes, onions and cheese rather than just pouring the cheese on top. When I first took it out of the oven I was worried it was too liquidy, but after sitting a few minutes, the excess liquid absorbed into the potatoes for the perfect consistency.

Not very good. It needs at least double the amount of sweetener.

Stephen's Chocolate Chip Cookies

Reviewed: Nov. 5, 2010
These are good cookies. I wouldn't say they necessarily deserve the overly hyped up reviews - they're a fairly basic-tasting chocolate chip cookie - but they do taste good and are worth repeating.

Yummy! I used a 8x8 in. pan, used only 1 cup graham crackers, added an extra cup of coconut flakes, halfed the chocolate chips, and used the full amount of milk.

FANTASTIC! Used more lemon juice and less water, added 1/2 tsp tartar and 1/2 tsp vanilla extract to the meringue. Turned out perfectly! Will definitely make again.

Fluffy Cake Doughnuts

Reviewed: Mar. 14, 2012
Used 2 tbs butter instead of the shortening, omitted the cinnamon and nutmeg in the batter, and instead followed the suggestions to dip the doughnuts in butter and cinnamon sugar instead.

Boston Baked Beans

Fabulous! I added some diced green bell pepper (sauteed it with the onion, garlic, and bacon), and cooked it uncovered for the last 2 hours to thicken the sauce.

My Crab Cakes

Reviewed: Jan. 3, 2011
I don't care for seafood, but my husband said these were as good as any he has had in a restaurant. I made a couple of alterations: double the mayonnaise, add 1/2 cup chopped green bell pepper, add another egg, and add 1 tsp Worcestershire sauce. I served it with garlic aioli.

I used only 1/2 tsp ginger and added a touch of salt. Taste great, but I wish they were softer/chewier.

Positively delightful! I substituted vanilla for brandy and added a pinch of salt. 8 minutes on 375 yielded golden brown edges and a gooey center. Will definitely make again!
