Slow Cooker Chicken Marrakesh

Like the other reviewers suggested, I double the spices, and added 1 tsp ground coriander, 1 tsp ground ginger, 1/2 tsp red chilly powder (Indian, not American chili powder! Think cayenne pepper) and 5 bay leaves. Turned out great, and my boyfriend loved it. Thanks for the lovely recipe!

Chicken Enchiladas with Creamy Green Chile Sauce

I can only really rate the sauce, which I thought was nice but fairly bland. My 6 year old loved it though! I used 1 pound of ground turkey (what I had on hand) cooked with half a packet of low sodium taco seasoning and added some of the green chilies (I had a 7oz can, so 4 oz in the sauce, and 3 in the meat) and sauteed onion for the filling. Next time I will add some salsa to the meat when I cook it, to give it more flavor. I will also put some sauce on the bottom of the pan before I put the enchiladas in, as the bottom got a bit hard. I used more tortillas (probably closer 18) and packed them tightly in the pan.

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

So yummy! The spice was mild enough for my kids, and they thought they were fantastic. I used a mini-muffin pan as well (they baked up in 7 minutes). I stuck lollipop sticks from the craft store in them per my 6 yr old request, "to make them like a real corn dog". I didn't make the sauce, as the kiddos just wanted to dip it in ketchup. Definitely going in circulation. Thanks for the lovely recipe!

Slow Cooker Lentil and Ham Soup

I read the reviews, and was expecting a really great soup, and it was dreadful! It was so salty it was nearly inedible. I added water at serving just so we could choke it down. Any recommendations for improving it? I used chicken soup base and water instead of chicken stock, and precubed ham. Next time I might try with low sodium chicken broth and leftover ham from a whole ham.
