Red Cabbage Salad II

All I tasted was vinegar and seasoned salt (not a good combo). Giving it 2 stars instead of 1 to allow for the possibility of user error. :)

Sarah's Applesauce

I used 6 Golden Delicious apples instead of 4. Kept the water and sugar levels the same, except I threw in a pinch of brown sugar as well. I have a sweet tooth, but it was *slightly* too sweet for me. Hubby and kids LOVED it, though. I will definitely make it again and experiment with sugar and water levels.

Feta Cheese Turkey Burgers

Great! My family won't touch black olives so I just added some olive oil to the mixture. It was DELICIOUS! My kids actually ate it (they won't eat regular hamburgers), and my red-meat-lovin' hubby even asked for me to make it again! Thanks for a tasty, easy recipe!

Spinach Garlic Soup

Taste was excellent; exactly what I envisioned! Added chicken for a hardier meal. WARNING: the appearance is kind of an icky, pale green. This cause my husband to turn his nose up at it. But if you're a fan of spinach, this is a great recipe.

Great tasting and very easy to make. Warning: when toasting your coconut, check it frequently. I found out the hard way that coconut burns very quickly!

Deep-Fried Sweet Potato Balls

My husband loved these; I thought they were just OK. I had a hard time "stuffing" the sweet potato balls--they ended up huge by the time I was finished! Also, the balls came out super greasy even though I have a timed deep fryer with a temperature gauge. I did add some sugar, cinnamon, and vanilla extract to the mashed sweet potatoes, which was yummy.

Pumpkin Muffins II

This recipe was AWESOME. Perfect taste, perfect texture--just like what you might find in a restaurant. I cut the recipe in half (used 2 eggs), and it still made 10 large muffins! I also used a little less cloves and allspice than recommended so that it wouldn't be overpowering.

Baked Spinach

This recipe is basically a quiche without the crust! I followed the advice of the others and added onion and garlic, but over all I still thought that it was lacking something. Also, the final product is VERY heavy, so if you are looking for a light vegetable dish, beware.

Better Than Pumpkin Pie

This pie was great in all respects except one--it was FAR too spicy (and I like spicy food)! I will probably cut the spices in half next time. Other than that, the squash tasted GREAT, and I loved the texture (it was watery when I put it into the oven, but came out perfect).

Eggplant Parmesan II

This recipe was overall fairly good. My only problem was this: We only used ONE (large) eggplant (the recipe calls for three), and it required FAR more sauce, egg, and bread crumbs than the recipe suggested. Plus, my husband and I had more leftovers than we could ever eat! So, use caution when purchasing your ingredients for this dish.
