Campbell's Kitchen Tuna Noodle Casserole

Reviewed: Nov. 19, 2013
I use this recipe often because I can always have the ingredients on hand for a quick meal. The only reason this doesn't get 5 stars is because I add so many things. But this is a great base recipe. I sometimes add dried onions but usually onion powder and garlic salt as well as garlic salt and shredded Mexican cheese 1cup. I also use pano bread crumbs which give this a wonderful crunch! I have also substituted frozen cut green beans for the peas when my daughter has dinner with us. Yum!

Pork Marsala

This is delicious and great to serve with rice. :) I made it in a large cast iron skillet which helped greatly with the browning. I will make this again.

Split Pea Soup

Reviewed: Apr. 4, 2013
This is the absolute best Split Pea recipe ever! I have made this with smoked ham hocks and when I add the carrots, celery and potato, I diced the meat from the ham hocks and put it back in with the veggies. I have also made this with the leftover ham bone from a spiral sliced ham, and I also added a few thick slices of diced ham. My daughter who dislikes peas, cooked celery and cooked carrots is one who requests this often. Serving this with cracked black pepper trinkets instead of plain crackers.

BBQ Steak

Reviewed: Sep. 2, 2012
This was a great marinade without the Dijon style mustard since we didn't have any. YUM! We will most definitely use this again, maybe with the Dijon next time:)

Chicken Breasts with Lime Sauce

Reviewed: Jul. 5, 2012
This is a great recipe that can easily be altered to suit any taste. I made the sauce using bottled lime juice to deglaze the pan and about 4 T margarine. I used 1/2 t dried chives. And followed the rest of the recipe. It was great, everyone loved it, we will have this again.

Crumb-Coated Chicken Thighs

Reviewed: Jul. 2, 2012
This is full of flavor. Since previous reviews mentioned not having enough crumbs, I used 1/2 cup of plain bread crumbs. I was sure to dry each boneless thigh with a paper towel before adding them to the crumbs. Since they were boneless I cooked them only 30 minutes without turning halfway. They were fabulous, tender and tasty.

Balsamic Roasted Pork Loin

Reviewed: Jun. 11, 2012
I couldn't give this 5 stars yet because I used a pork tenderloin. The closest thing I had on hand to the steak seasoning was mesquite seasoning, which worked really well. I drizzled the pork loin with honey right before putting it into the oven. I left the tenderloin in the oven a bit too long, i tried to guess since it was slightly over 3 lbs and in 2 pieces, but it still turned out delicious. I used very high quality balsamic vinegar and olive oil. The resulting pan drippings made a fabulous gravy that was slightly tart, which made up for the dryness. My son had leftovers without the gravy and said it was perfect the way it was.

Summerly Squash

Reviewed: Jun. 11, 2012
This is so full of flavor! It's a real keeper. The tomatoes add SO much more than I imagined reading the recipe. I may even try this with cherry or grape tomatoes sometime. I will also try using a steak rub as called for in the original recipe since this time I used McCormick Grill Mates Mesquite seasoning instead of a steak rub. My husband raved about it with each bite. Yum!

Spaghetti Squash I

Reviewed: Jun. 2, 2012
This is a great recipe! I only gave 4 stars because I used goat cheese because it's what I had at the time. I also cooked the squash the day before and it was still great! Don't think about it... Make it! Yum!!!!

Roasted Tomatoes with Garlic

Reviewed: Apr. 21, 2012
This is fantastic! Just when I thought I was going to have to throw out more tomatoes because they were wrinkling. I used jarred minced garlic and cooked 30 minutes. Next time I will try to wait longer, they were awesome.

Chicken Pot Pie IX

I find this recipe to be rich and flavorful without a can of soup. I lost this recipe once and made another, and regretted it when my husband asked what happened. I am happy to find this again and will suprize him soon with it, I will from now on remain loyal to this one. :)

I used this in the Angel Hair Pasta with Garlic Shrimp and Broccoli. Omitted the pine nuts or sunflower kernals since I had none. Still a great Pesto.

Spooky Witches' Fingers

Reviewed: Jan. 21, 2011
My husband and I had a blast making these for the neighborhood Halloween block party. They were a hit! And SO delicious! I will be looking for something else to make with this recipe. For our fingers, we added a chocolate chip to the stub end of each cookie. We also found that removing the almond after baking then reapplying it with the red gel worked best. This is definitely a keeper!!!!
