Grandma's Corn Pudding

Made for Thanksgiving using 2 cans whole kernel and one can cream corn. I also left out the sugar and I'm glad I did. It doesn't need it. I also added green onion. Everyone loved it and asked me to make again for Christmas.

Easy Shake and Bake Chicken

4.5 stars. Less than 5 because it wasn't quite as crisp as the old shake and bake . Based on others' suggestions, I used more spices: paprika, chicken seasoning, salt, pepper, garlic and onion powder. I might have thrown in cayenne pepper, but I didn't have any. I'm not sure it was all necessary anyway. I also added 1/4 cup finely crumbed corn flakes to the flour mixture. Not to change the recipe, but to use up some stale cereal. It was quick, painless and the boys loved it. My DH does not like boneless chicken breasts at all, if it's not fried chicken on the bone, he doesn't want it, and said so...repeatedly. After eating it, he said it was wonderful, and almost like fried! By the time I made mashed potatoes and a box of stuffing it was ready. EASY weeknight meal. I would have liked a little more crunch, but I might have used too much butter or the fact that I used parchment paper (I was out of foil and didn't want to scrub the pan) or the addition of corn flakes could have altered the outcome. Either way, this WILL be made again and that is a HUGE deal from my boneless breast hating man :)

Pork Steaks

Sorry, we just weren't a fan. WAY too salty. I might try this again with teriyaki instead of soy because the ease of the recipe was great.

Slow Cooker Chicken and Dumplings

Epic fail for me. I used 3 breasts (all I had) and 1 can cream of chicken soup (all I had) and used broth like the others suggested. I also added chicken seasoning, pepper and parsley as others suggested. Let me tell you the broth/chicken came out DELICIOUS! My problem came when I added the biscuits. Another reviewer suggested to cut them up smaller so they wouldn't take so long to cook. I cut them up all right, and the entire beautiful pot of yumminess turned into total glop :( It was my fault. So I quickly made a pan of biscuits in a mini muffin tin and floated them on top of the glop and dinner was saved. The family didn't know the difference and everyone liked it. Anyway, don't cut them up to small folks! I did give the recipe 5 stars because before I added the biscuits, it was AWESOME and I WILL try it again.
