Clark's Quiche

I've made this a few times and it's always well received by everyone. It was a really big hit last Christmas when I met my boyfriends family for the first time. I wanted to make something tasty to feed the group on Christmas morning. Both pies were devoured in about 20 minutes & there were only 8 of us :)

Beefy Tomatoes

These were great my boyfriend and I loved em. I subbed a few of the ingredients. Instead of beef I used mild turkey sausage, brown rice instead of white, low-fat Italian cheese blend instead of cheddar, and an egg beater instead of a regular egg. I will definitely make again real soon. I thought they would be good Mexican style using some chili powder, pace picante sauce in place of the plain tomato pulp, and Spanish rice instead of plain rice, and cilantro in place of the basil.
