Best Chocolate Chip Cookies

It's true, these really are the best chocolate chip cookies. I live around a lot of strict vegetarians, so I substitute a banana for the two eggs. Honestly, I like it better with the banana than the eggs! It gives it this curious sweetness that makes people ask--what is in this delicious cookie? So, cook as directed (which is great) or try mashing and beating a banana to the consistency of beaten eggs. I think you'll like it!

Pumpkin Casserole

I am rating on behalf of my husband who asked me to make more of this right when the first pan got cleaned off. He loved it. I made it for a Thanksgiving meal and also got rave reviews. I actually like it even better cold, it's very much like a crustless pumpkin pie/custard. It's a dish that gets people's attention, plus it's easy--two thumbs up!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I first made this about 4 months ago--it has grace our table MANY times since then. Delicious. It is great as a puree with rice, or as a stew. I prefer it as a stew with some yogurt added, my husband likes the stew and rice. Either way, this is a soup lovers soup. Hearty, warm, colorful, guilt free and full of flavor. Thanks!

Cucumber Raita

Moroccan Couscous

Fabulous, although I made a few changes. I substituted mushrooms for zucchini. Also, I'm not a big orange fan, so I omitted the zest (big time saver, too) and only used 1/2 of the recommended juice. I might try the full juice recommendation in the future. It was wonderful. I will mention that it is better the day of cooking, even to the next, but don't let this go more than 2 days in the fridge--the chickpeas & couscous dry out. BUT, I doubt it will make it that long anyway! I ate with the Cucumber Raita by the same author.

One Bowl Buttercream Frosting

Easy & delicious. I used it as a frosting for Jenny's Black Forest Cake (also on this site). I reserved some cherry juice and added it in place of some of the milk to tie all of the flavors together. This is definitely making it into my tried & true recipe file...
