Almond Shortbread I
They did melt in your mouth... after much fussing and babying along. When I started to add the flour, I began to have some serious problems. I ditched the wooden spoon concept and went over to my hand mixer. There was no "smooth and well combined." It was like... flaky dough. After I let it sit in the bowl while I re-read the reviews, I decided I'd put it in the fridge. I took it out of the fridge and it was a rock. So, I microwaved it, got it room temp, and then ended up being able to roll it out between two pieces of saran wrap. I was almost going to throw it out when I said, oh, we'll just test it. They turned out. Not sure if it was worth the work.

Pumpkin Chocolate Chip Cookies III
I've made these three times now, though I've doubled the recipe each time since I make big cookies using a ice cream scoop. They are definitely cake-like, but that's why we like them so much. I did use more pumpkin and less oil in my recipe because my dad loves pumpkin, and instead of just using cinnamon, I used quite a dash of pumpkin pie spice too. I cooked them at a higher temp of 370 and just watched for them to get "cracked" on top with some firmness in the center of the cookie. :D Just right, nom nom nom!

Decorator Frosting
Very easy to make, very tasty. It came out slightly dry without the food colouring, but once you put it in it really clears that up. :D Loved it, this is one of those recipes I think I'll have to memorize.
